  • Hi - reporting in. I've had two spending days since the challenge started for me.

    1st November £28.81 ( just looked at receipt and it said £48.81 then realised I took out £20 cashback from another budget)

    5th November £9.35

    Includes things like bin bags so not too dreadful.

    Will add to signature line.
    Aiming to get healthy in 2014.

    I know you said pasta dish but would a baked potato dish do?

    Sliced peppers, garlic and onion roasted, then layered with thin sliced potatoes and cheese sauce, several layers, and topped with cheese and breadcrumbs. Very yummy :)

    Love peri peri chicken !! Mr Li*l had them for ready-to-cook 1/2 chicken at £1.89 and I got 4 ! :D:D

    A NSD for me today. We had HM Chilli and Coconut Rice for tea - definitely different but as we are trying to clear stocks that's what happens when I ask DH to make a choice :rotfl:Mind you, he did eat every scrap.

  • Morning folks. I know we are well into November but I need to get back on this challenge as I have spent more than half my monthly budget already:eek:. Now aiming for a maximum of £25 per week for the remainder of the month. I will have a proper read through the thread during my lunchtime today with a notpad for meal ideas beside me.

    S0omething I always found is very cost effective is a joint of meat - have it roast, have it in sandwiches, have it cut up in pasta in a sauce, fry up cubes and have it in an omelette (perhaps even spanish style bulked out with tomatoes and paprika potatoes), have it in a rice dish (curry or just glazed with honey and soy and chilli), have it slow boiled in a stew with winter veggies - parsnips/butternut squash/swede. A joint can easily last you a whole week like this.

    I did this last week with a joint of gammon (£5 from Sa1nsburys) and did two of us for the week.

  • Hi everyone just thought I would introduce myself as having followed in the shadows of your october challenge I want to join in for November. So for my first month I think that we spend around £50 per week so lets see exactly what I spend on my lot, (2 adults, 2 children aged 3 and 3 months).

    So for my first month can I join in at £50 per week.

    I had a spend of £9.72 in Aldi last night which consisted of two big bags of cat litter (enough to keep the kitty sorted till I get paid on the 18th hopefully!), milk, bread, a kilo of bananas, 15 free range eggs and two packs of peppers.

    I'm going to chop and freeze the peppers tonight. I made a massive pot of pea and ham soup this morning before work, so that's my lunches for the rest of the week sorted, and I also made a vat of bolognaise last night. That fed both of us last night and will feed us tonight, and I froze two dinners worth as well.

    Tomorrow we're having roast chicken, the following night will be chicken & chorizo jambalaya. I have no idea what to do with the carcass to make stock or what I would use it for. Can any more OS people than me give me some suggestions?

    Not a good selection at Aldi this week then and all at 89p - that's far higher than they usually are. Much prefer the winter stew veg selections they sometimes do and usually at 39p!

    Will be having another NSD today as can't get to the shops as DH has the car today!

    Moomin - To make stock with the carcass is very easy. Just pop the whole carcass into a big pan - fill half full with boiling water. You can add any leftover veg as well for flavour - end of leeks/carrots. Old potatoes/onions that kinda thing. Basically the more the merrier. Add good amount of salt and pepper. Boil for hour or so until the meat is all away (or easy to peel away) for the bones. Once it has cooled a bit, pick out the bones and bin those. You should have a lovely clear liquid that can then be frozen in watertight containers. Perhaps freeze half. The other half ou can use as a lovely addition to soups/risotto/stews/gravy/pies/mince. Chicken stock is especially versatile as it is not as strong as red meat (lamb/beef) so goes with vegetable dishes asa well as chicken/ham/pork dishes, but you could also equally use it for beef and lamb dishes.

    For example, you can even use it to spread out sauce - I had sticky pork last night with soy/honey/chilli and used it to make the sauce a bit less sticky. You can either add the exact amount or pop a bit more in and reduce. Same principle applies to maybe a white wine sauce/a cranberry sauce etc etc.
