Apart from feed it to the dog.

Got a £15 piece of mutton in the whoopsy isle for 50p, but maybe should not have really taken it as cant find a nice receipe.

I know it has to be cooked for ages, and thought about a stew.
Anyone got tried and tested mutton receipes.

Really dont want to feed to the dog as it was such a expensive meat to start with

    Thanks

make a stew out of it like you would do a casserole or something or do a jamican mutton rice and peas recipe a fav in my house better in a slow cooker as it needs to be cooked slowly for a couple of hours for it to taste beautiful.

I second curry- Mutton makes awesome curry- use any receipe that you would normally use with lamb/beef but just allow it to simmer or slow cook for longer- brown the meat at a fairly high temperature that turn down the heat do the usual onions/ginger/garlic and make your curry up as usual- I can post more detailed recipe if you like but didn't want to bore you with it if you already have a decent curry recipe you use!

I tend to add extra cumin, some tamarind and mango powder it does bring out the flavour...will taste even better the next day - cooled and left in the fridge- warm up to eat as the flavour develops even more.

There is also a nice soup/stew type dish I make called Halim loosley based on this recipe:

it's one of those things everyone has their own take on but this is a good receipe to start from- normally cooked with goat meat but works very well with mutton too.

As everyone else has said...use it in asian cooking. I lived and worked in Pakistan for several years and alot of authentic recipes call for mutton (not lamb). Some pretty delish!

Sorry I don't have a tried and proven recipe but the following link might be useful...

Mutton was the traditional ingredient in Cawl (welsh stew). it makes a very tasty stew. and is so easy to do.
all you need is your mutton
onions carrots and leeks (you can leave out the leeks if they are not to your taste), or perhaps some swede. you can put in almost any root veg you want as long as the main ingredients are mutton onion and carrot.
chop all meat and veg up into big chunks. you can flour and sear the meat first if you like (I do this as I think it adds flavour and thickening to the stew.
add water until it just covers the meat and veg, add salt usually about a dessertspoonful for tha big pan, and bring up to the boil - skim off any scum!. immediately turn the heat down and cover the pan. now leave it to cook for about 4 - 6 hours. turn off heat - leave it overnight. next day
turn the heat back on again at simmer - bring slowly up to bubbling point and leave it on the hob all day! about a couple of hours before you want to serve it add big chunks of potato. check the seasoning! serve with big slices of HM or bakery bread! Thats how traditional Welsh Cawl was made and served!
  • I love mutton but I can never find it anywhere. May I ask which supermarket you got it from?

As for recipes I would second the curry goat idea - tried this is the pub of a family friend and it was delicious. I have made a casserole from mutton shanks (although I think it would work with any cut). Basically just brown it with some onions and sliced carrots, throw in some lamb or chicken stock and a handful of pearl barley with a teaspoon or so of herbs (I used rosemary and thyme). Put it in the oven on a low heat for about 3 hours or do it in the slow cooker. You can thcken it with flour if you like. Served with some potatoes and green veg is lovely.

    Slow cooked casseroles.

Much of the 'lamb' sold in supermarkets seems suspiciously large and tough, so I would guess that mutton is more common than they admit.
