Here is a South African favourite traditional Mutton Curry recipe.
I hope you will enjoy it if you do decide to try it.
Ingredients:
750g to 1kg mutton
Oil
4 onions, chopped
4 crushed cloves of garlic
1 small piece of crushed ginger
2 chopped tomatoes, or half a can of chopped tomatoes
15 ml medium or 10ml hot curry powder
5 ml turmeric
5ml garum masala
1 chopped green chilli or a pinch of dried chilli flakes or 5ml chilli powder
5 ml salt
2 ml pepper
1 stick cinnamon
3 cloves (optional)
2 bay leaves
25ml wine vinegar
300ml meat stock
1 large potato, cut into fairly large dice
Method:
Cut meat into cubes. Fry onions in oil until softened. Add crushed garlic and ginger and fry some more. Do this on a low heat and don't burn the garlic as it will then taste bitter. Add curry powder, garum masala and turmeric and fry lightly. Add all remaining seasonings and fry stirring frequently. Push contents of pan to one side and add the meat, stirring frequently, until browned. Add tomatoes and stir for a further 5 minutes on a low heat.
Tranfer meat and onions, spices etc to a slow cooker. Add vinegar and stock, cook until meat is starting to go tender, 5–6 hours.
Check to see, during the cooking time, if you need to add a bit of water if the liqiud is not enough.
Heat some oil in a pan, add a teaspoon of tumeric and diced potatoes. Stir fry on a low heat until potatoes have softened slightly. Add to the slow cooker and mix in with the meat.
At this stage, you could add the tinned chickpeas and/or spinach if you like.
Cook for a further hour or so, until the meat is tenderand the potatoes have softened. Taste for seasoning and add more salt if required.
Serve with rice and sprinkle the curry with chopped coriander.
You can also serve with a finely chopped tomato and onion sambal in a bit of white vinegar as a side dish. If you are brave, you can add a finely chopped green chilli to the tomato/onion sambal. Also, serve with a fruity chutney, dessicated coconut or chopped banana as sambals on the side.
A good chunk of white bread or a naan bread is good too, for mopping up the curry gravy.
A curry always tastes better if you keep it for a day or two for the flavours to develop and then, eat it.
If you don't have all the spices listed above, just use a jar of curry sauce or some curry paste from a jar and just add what you have that is similar and hope for the best!

Where did you get your mutton from? I've always wanted to try it in a curry but can't find it in the supermarkets (haven't had a chance to get to my local independant butcher yet)

Me and hubby have wanted to try mutton too but have been a bit dubious about Halal meat because we both seem to think that there are some ethical problems with it- can't remember what exactly- think it has something to do with the method of slaughter but really not sure- can someone enlighten me?0

Halal meat is slaughtered by slitting the neck of the animal and allowing the blood to drain, after a prayer is said. Whether it's any more or less ethical than driving a bolt through the brain of the animal or electrocuting it is a matter of opinion I guess.
