Here's a quick recipe involving potatoes:

Cut potatoes into one inch cubes and boil until cooked, then drain. Fry mustard seeds in oil for a minute until they pop, then add diced onion, carrot and garlic; spinach also goes well. Add some Indian spices (I use garam masala) and some peas; I also add pine nuts. Equally you can go for a Chinese effect with 5-spice powder or a dollop of sweet chilli sauce.

Cook for bit, mash with a masher so the potato cubes break up; let mixture cool.

Roll out some pastry (I'm using filo today) and cut into any shape you like. Dollop on the mix, seal the parcels firmly using water to sandwich open edges together, brush with oil, and cook in the oven according to what kind of pastry you've used. You can also fry them.

These are scrummy, and freeze well for lunches. When I use ordinary pastry, I cut out circles and fold them over like Cornish pasties; today I'm going more for the spring roll effect. You could also do triangles like samosas - roll up as cones and seal the end.

    Do you not like crisps?

A good bag of kettle chips should remove your hatred of potatoes :D

If you dont like the mashy texture then potato cakes might not be up your street? Theres a more denser dryer recipe called potato bread thats more irish adn floury, have a google you migh like that, good with fry ups :D

what about scalloped pots ( great with new pots too) slice into coins, parboil for about 5 mins, chuck on an oiled tray in the oven till they go really crispy. Good for dipping as a snack in front of the telly, great for laying out on top of fish pies, and lovely with loads of stuff, steaks, chops, whatever!
 Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind
    This Ive come to know...
So if you agree have a drink with me, raise your glasses for a toast
