Try grilled potatoes, it;s one of my favourite ways at the moment

You just slice the potatoes (about half an inch) don't bother to peel them
par boil them for about 5-10 mins until just tender
score across the cut surface in a criss cross pattern
brush on olive oil (or any oil really)
sprinkle with salt and pepper or seasoning of your choice
Bung under a hot grill for 10 mins on one side and 5 mins on the other
or until they are a lovely golden colour.
I guarantee this will end your potato phobia :)

New potatoes are best IMO when cooked, sliced and dressed with a bit of butter... even nicer if you leave them to go cool before eating! It's so simple but soooooooo tasty :D

Not all potatos go mashy. I think you might be in trouble on the bakers but if I'm right new potatos go waxy rather than mashy so you might have more luck with them. People will tell you it's ok to freeze potatos, personally I've never had any success with it so try it out before you freeze too much.

For a lot of people there aren't enough potatos and too many other veg so you could also try to do a swap!

I'd suggest using the new potatos sliced ot make a dauphinoise if you aren't worried about calories. The other thing you can do (and I know it sounds mad) is slice potatos and boil till just cooked and use on top of pizza with mozzarella cheese, tomato sauce, italian spices and a drizzle of olive oil. It is tasty and filling and I think the base would mask the potato texture pretty effectively. It tastes great.

It might be exactly this that you hate but there's mash and mash. My s-i-l made me some recently. It had no butter, no seasoning, huge great watery lumps and tasted disgusting - he loves it like that (I blame the Mum). But mine is different.First choose a spud that doesn't disintergate - say a red Romano, or maris Piper - NOT King Edward) then you boil till till tender, drain well, then: add a LOT of butter, and a splash of milk (you can always add more but can't take it away). Season with salt and pepper and whisk - preferably with a hand held electric mixer (a Delia trick, the first time I was surprised, but now never do it any other way). Whizz till it is all creamy and gorgeous. Then I sometimes add mustard (to go with sausages) or olive oil (because I like the taste) or cheese (yum) or cooked leeks or onions, or anything you like really. It should be all creamy and rich, and for your health's sake you should probably eat it only about once a year, but I eat it a bit more than that, and what's left over makes wonderful bubble and squeak. HTH.

New potatoes are great for making potato salad, using half mayo and half salad cream works best imo, I normally add some very finely sliced spring onions and parsley and it is so popular. Its best just warm!

I had an allergy type thing for a while and couldnt eat onions, I wanted the flavour and so used some onion granules instead. You cant substitute the texture but its very useful for things like sauces and just adding that depth of flavour you get with onion. You can also buy dried onion which my mum used to use in things like casseroles, it doesnt give a slimy texture because it has been dried out.

  • I only like potatoes cooked in slightly unhealthy ways like chips or roasties (yum), but have one other slightly unhealthy recipe that is absolutely gorgeous.

Peel and cut into halves or quarters (depending on size) and par boil potatoes untill slightly soft, then I use a grating type machine that cuts the potatoes into rosti (matchstick) size strips.

Put thin potato sticks into a large bowl, mix in small strips of honey roasted ham, chopped spring onions (green bit and bulb), a little grated cheese, then add salt and pepper, lift out one handful at a time and place onto a baking tray in slightly flattened haystacks and cover each haystack with the remainder of the grated cheese, should cook in a high oven (200:beer: ) in about 20 minutes.

    Absolutely gorgeous.
