Well if that is intended as a letter before claim it is one of the most non-compliant LBCs I have seen! If that is GPB's best effort, they want shooting!
As part of your defence you should raise the fact that the claimant's letter before claim did not comply with the requirements of the Practice Direction on pre-action Conduct, and (despite being represented by a solicitor) faile to complete the steps set out in the Practice Direction before starting proceedings as it was required to do.
Also inform the court that you consent to this case being referred to the Parking on Private Lands Appeal service (POPLA) this being the appropriate form of ADR set up by the parking industry, and you invite the claimant to agree to this as directed by the Practice Direction, and as the court to stay these proceedings to enable the parties to avail themselves of the POPLA ADR.
You should also challenge the claimant's locus (standing) to issue legal proceedings against you as it has no proprietory interest in the land and put the claimant to strict proof of its authority to act as agent on the landowner's behalf in bringing these proceedings
You then need to compile the rest of your defence, which includes stating that the claim is denied in full, and rebutting each allegation made by the claimant.
There is advice on here and on Pepipoo for compiling a defence (you need to do a search, and post your draft defence here before forwarding it to the court) but don't miss the deadline as once the 28 days have passed the PPC can enter judgement in default against you.
