cakes & bakes that will keep a week or more?

Hi there,
I am going camping & wanted to bake some goodies to take with us to keep the costs down, I know that parkin & gingerbread are good for keeping as they need to mature, can anyone suggest anything else?

Hi.A rich fruit cake will keep well because of all the dried fruit in it-there's a high sugar content.I made a rich fruit cake about three weeks ago and still have about a third left.I keep it in the fridge,wrapped in grease-proof paper and aluminium foil and it tastes just as good now as it did a few weeks ago.I usually cut a slice and leave it for 30 minutes before eating,so that it's not cold.

A lot of cakes can be frozen,dried fruit cake,chocolate cake,Victoria sponge,gingerbreads etc.When I do this,I freeze individual slices.

thanks for your reply marmiterulesok, sadly my family wont eat dried fruit & the cake/bake needs to be portable to take away camping, I'm wondering how long I could keep flapjack for if it was wrapped in foil (and hidden from the gannets)

Flapjacks are good - and you can top with fruit, or put chocolate on.
Also, brownies if wrapped up will usually last a week. x

I think any cake or bake that is made with oil instead of butter will last longer.
There was a thread on here before about cakes made with sunflower oil.

That's a shame about the dried fruit.They really don't eat cake with currants/sultanas/raisins in?

I'm not sure about flapjacks;it's not something that I usually make.Like you say,something like parkin/gingerbread that improves with time is a good idea.

What about biscuits?Anzac biscuits are nice,gingernuts...there's a whole variety...?they might get a bit soft after a few days,but they're still edible.I think that brownies could keep for up to a week;muffins too.

Flapjack keeps really well, brownies will keep a week if wrapped well. Shortbread keeps well in a tin, as will home made cookies.

flapjacks keep well. My OH is marathon training at the moment and I make flapjacks for him (he's skinny enough and needs his calories!), they easily last a week in an airtight tin.
