Cakes using oil

I saw a recipe somewhere on here for a chocolate cake using oil instead of solid fat. It sounded delicious and easy but I can't find it anywhere now:o .
Please could someone point me in the right direction or post a recipe of their own? I'm not much of a cake-maker(mine always seem to end up very dry:eek:) The one I read about was a moist chocolate cake, but any kind of cake would do. It would be the answer to my family's prayers :rotfl:

There's a fab carrot cake recipe on here somewhere which uses vegetable oil. It's GORGEOUS, really moist and yet crumbly at the same time, and I make it frequently...
(pops off to find it)
Here it is, as posted by catowen (thanks chick, it's delicious!)
P.S. When I cook it I usually just do the cake, not the icing. It's fab enough on its own.Operation Get in Shape

You can make a nice cake with Mild & Light Olive oil. Its beautifully moist. Have a look here at the sweet recipes for a chocolate and orange cake.

Ooh they all sound good... has anyone ever heard of using pureed prunes/dates in place of butter either? Heard it's has a similar effect to using oil but even less fat... if anyone has any recipes (got a feeling it works well in chocolate brownies..?) I'd love to hear them!0

They all sound wonderful. Thanks very much everyone:T. I've no excuse now!
Thanks very much thriftmonster for refreshing my memory about Mr BadExample. How could I have forgotten his cooking threads?:rotfl: :rotfl: :rotfl:0 -
Does anyone do this? I've seen references to it, but I've found it hard to find any directions or recipes, either in books or online.
I found some directions in a book for converting recipes, but the resulting cake was not that good. Hard and dry.
I really want to find an alternative to butter that isn't margarine.0 -
I've made a yoghurt cake before that uses cooking oil. Tastes absolutely yummy, you get nice moist cake and the best thing is all the measuring is done in the empty yoghurt tub so less washing up!
I'll see if I can find the link to the recipe for youSometimes you have to go throughthe rain to get to therainbow0 -

I made a carrot cake once which told you to use oil in the receipe not marg. I found this odd as I'd never heard of making cake with oil before, but I have to say it was the nicest carrot cake I had ever tasted. The oil made it really light. Unfortunately I can't find the receipe at the moment otherwise I'd write it down for you. This is the only time I've come across it though.0

I made Delia Smith's Saturday Carrot Cake today using oil. I don't have corn oil so replaced it with sunflower oil - it was lovely and moist.some people grin and bear it, others smile and do it0
