I make Rachel allens carrot cake with oil and it is delicious and moist. It did seem wrong the first time I made it, but it is so super easy and yummyA little nonsense now and then is relished by the wisest men :cool:

My favourite cake recipe using oil is this one by Michael Barry:
it's very chocolatey, moist and delicious and just improves with keeping so very unusual for a sponge-type cake. I've made it for a wedding cake for a friend too so it has very high approval ratings. I know it looks weird but trust me, it's great.
Fairtrade Chocolate cake
Quantities for 6” or 8” cake
6oz (9oz) plain flour
3 (4½) tablespoons Fair Trade cocoa
1 (1½) teaspoons baking powder
1 (1½) teaspoons bicarbonate of soda
5oz (7½ oz) Fair Trade golden caster sugar -
1 (1½) tablespoons black treacle
2 (3) eggs
5fl oz (7½ fl oz) vegetable oil
5fl oz (7½ fl oz) milk
apricot jam, cream, chocolate ganache or butter icing to finish
Method
Preheat oven to 160◦C / 325◦ F/Gas mark 3.
Line and grease two cake tins.
Mix all the dry ingredients together, then add everything else and beat or whizz in food processor until thoroughly blended.
Pour the mixture into the tins and bake in the oven for 35 to 45 minutes. Cool then store in airtight tin until required, then sandwich with filling of your choice.

Sorry if this has already been asked previously.
I am looking to make a cake but it asks for vegetable oil and I only have olive oil. Would it be okay to use the olive oil.:o

If it's the extra light stuff, it'll be fine... however extra virgin oil will be too strongly flavoured for cakes.Competition wins: 09/12 bottle of cognac; 01/13 combi microwave0

Unfortunately it's the extra virgin. I'll have a look at getting a small bottle tomorrow. (all because i've got too many courgettes and thought i'd make a lemon courgette and chocolate courgette cake.)MFI3 T3 # 750 -
I've used both sunflower oil and light olive oil in cake recipes and they both turned out great. However the light olive oil is ridiculously expensive in comparison, so get the sunflower for money saving. (I only got the light olive oil when it was on DTD at tesco)
