Cake recipe using oil??

years ago my nan gave me a basic sponge recipe but it says to add oil?? apparently it makes the cake more moist? does this actually work. i've always left it out but was talking to a friend about it who thinks i made it up. anyone else heard of this??

Yes, I used to make it years ago. 2 of my children seemed to get very colicy if I ate cows' milk proiducts, so while I was breastfeeding them, I used this recipe. I'm afraid it has been lost over the years, but you are definitely not making it up!0

We used to get lots of packets mixes (Like Betty Crocker) from the USA years ago (corporate gift from my fathers supplier) and they always included oil.

Yes I make cake using yoghurt and oil all the time.

The Hummingbird bakery 'hummingbird cake' which is banana and pineapple, and their carrot cake are both made using sunflower oil. They are fantastic, and very well behaved cakes, turning out well every time.
http://www.ocado.com/webshop/recipe/carrot-cake/2854 Here is the recipe online. Tip - if you make the frosting get the cream cheese in Aldi - don't use Phillidelphia. Philly has some sort of gum in it (guar?) and it always seems to liquid to me when I've used it for this cake, the Ald! cheese makes a much better frosting.
The Humminbird cake is the same recipe. Except uses caster sugar, 280g of banana, and 100g of finely diced tinned pineapple, instead of the carrots. Walnuts quantity stays the same. And it just has cinnamon, not cinnamon and ginger. See? I've made this so many times I don't even have to go and look - LOL. Fantastic cake!!!!

I use oil all the time, especially when I can't be bothered going to the shop just because I haven't got enough butter in fridge for baking- pop out for butter and spend to many ££££ on offers!!! Grrrrr
Oil does make it very moist.
I always put eggs, oil, sugar and a spoonful of milk in , whisk it first then put in the SR flour in. It always comes out fluffy and moist ( could also be the silicone baking tins).
I have also used oil in my homebaked bread (incl olive oil, but wouldn't use that in cake)

I'm vegan and use oil in baking recipes because it helps to bind it without milk and egg.0
