Cake recipe using oil??

    I have several American recipies for cakes that use oil instead of butter or other hard fat and they always turn out beautifuly very moist and keep much longer too.

    Carrot cake is usually oil and I do a chocolate cake as well.

    Muffins as well are usually oil.

    I'm another vegan who uses oil in cakes. They are much fluffier and moister than any cakes I used to make using eggs.
  • I have a friend who uses oil instead of butter in most of her baking, whether its cakes or cookies. I could never tell the difference. I guess you just have to make sure you use a flavourless vegetable oil, like sunflower oil.

    I make cakes with the flavourless olive oil sometimes, it's more effort as you have to fold everything in, but the cakes are very light.

    IMO a cake made with oil is never as tasty as a conventional cake. Edible, but thick icing helps.
