when we go away I usually make a couple of loaves of gingerbread and a fruit cake. My girls don't like currants/sultanas etc so I make a fruit cake with chopped tinned pineapple and glace cherries (which they do like!)weaving through the chaos...0

How about baking cakes in jars? These will keep unopened for a year.
