This is the plan. Days could very well get swopped around, but this is based on what I have in store.
S Chicken and chorizo pies with roasted peppers and tomatoes and possibly potatoes (This changed to courgette, chorizo and mozzerella pasta.)
S Something with courgettes - I'm looking for recipes. (This changed to a BBQ with stuff from the freezer as the weather was good. I do still have two courgettes to use up.)
M Pasta with smoked salmon and cream
    T Fish with roasted veg
    W Chinese with sister
    Th King Prawn Madras
F Left over King Prawn Madras

    Please don't eat your sister - that's not nice!!!

I'm trying to avoid the supermarket until Friday, but I'm sur DH will decide he needs something! Anyway, the plan is:

M - Pork steaks with carrots, broccoli, roast potatoes and gravy
T - Cheese and ham tortellini
W - Macaroni cheese with broccoli and sweetcorn
T - Lamb curry (freezer) with rice and naan bread
F - Turkey fried rice with curry sauce (all freezer)
S - out all day, so I'll make a picnic of marinated turkey kababs, sandwiches, rice crackers, raisins, apples and juice.
S - Will depend what veg I can get on Friday. There's a tomato and bacon pasta sauce in the freezer as a back up if needed.

Have a good week everyone x

    Hi all,

Last week's first ever meal plan was really helpful, so here i am again! Still trying desperately not to spend any money at Mr Ts as every time i walk through the door i end up leaving at least £40 worse off and with very little to show for it. So still working on using up the freezer and store cupboard for now.

Monday - Thai chicken curry with loads of veg
Tuesday - Salmon with asparagus and mange tout
    Wednesday - Homemade chicken jalfrezi
Thursday - Pork belly with baked aubergine and carrot/potato mash
Friday - Cod wrapped in pancetta with whatever veg we have left!
Saturday - Lamb souvlaki with flatbread and salad
    Sunday - Chili con carne

    Have a lovely week!

  • Posted about the risotto earlier in this thread :)

    The stew:
Fry a red onion, a sliced red pepper (or a handful of mixed sliced peppers from the freezer!), 2 garlic cloves and a handful of sliced mushrooms, until soft. Add 2-3tbsp of harissa and fry for just 30 secs or so. Add a tin of chickpeas (or equivelant rehydrated from dry), a tin of chopped toms and 500ml veg stock. Simmer for 15-20 minutes. Season, add fresh chopped coriander if you fancy. I like this with plain boiled rice :) You can of course use any other veggies, etc that you fancy in it!

Thanks I got risotto recipe and this one sounds like the one I do but mine contains aubergines. I like it with Moroccan couscous. Will definitely try your version though.
