I don't have an exact recipe for it.
Basically, I prepare some veg stock and add the juice and zest of an orange to it. Fry an onion and 2 carrots until softened. Add about 150g rice. Fry until translucent. Add a splash of wine or a mix of cyder vinegar & water. Add the stock a ladle at a time, following a normal risotto method. Add a couple of handfuls of spinach just a couple of minutes before the end of cooking. Stir in grated cheddar or cream cheese at the end if you fancy. Delish . :)

Thanks for starting us off, ditsykitchen.

    This week I've got:

Friday - takeaway pizza (my local pizza place keeps sending me really good special offers, so what I am meant to do? ;))
Saturday - spicy chicken salad wraps
Sunday - chorizo sausages with aubergine gratin (made with - fanfare please - home-grown aubergines! :j Sorry for the excitement, but this is the first time I've managed to grow more than one aubergine!)
Monday - Thai veg and smoked tofu noodles
Tuesday - salami and bean chilli
Wednesday - cheese and onion batter pudding with baked beans and grilled tomatoes
Thursday - speedy meatball stew (except I'll make my own meatballs rather than buying them)
Back after a very long break!

Do you smoke the tofu yourself or if not where do you get it from? I have only tried making it once and it didn't go that well.
