How do you make it?
I don't have an exact recipe for it.
Basically, I prepare some veg stock and add the juice and zest of an orange to it. Fry an onion and 2 carrots until softened. Add about 150g rice. Fry until translucent. Add a splash of wine or a mix of cyder vinegar & water. Add the stock a ladle at a time, following a normal risotto method. Add a couple of handfuls of spinach just a couple of minutes before the end of cooking. Stir in grated cheddar or cream cheese at the end if you fancy. Delish .October Grocery Challenge: £20.65/£150

This week I've got:

Monday - Thai veg and smoked tofu noodles
Tuesday - salami and bean chilli
Wednesday - cheese and onion batter pudding with baked beans and grilled tomatoes
Thursday - speedy meatball stew (except I'll make my own meatballs rather than buying them)Back after a very long break!0 -
