recipes for tinned potatoes.

A regular first night at camp supper, which I also do at home if pushed for time is:-
Saut! some onion and garlic in olive oil and a little butter (don't brown at this stage) add slices tinned potatoes, add salt, pepper and some Italian herbs, oregano, or whatever you have to taste, when it starts going brown and crispy add chopped up ham or chicken, cold sliced sausage , tinned salmon, or a flaked smoked mackerel fillet, sliced spring onion added at the last minute is good too. A nice veggie version is to use lots of sliced mushroom (tinned or fresh instead of the meat/fish). Great with broccoli, green beans, or a side salad. The best thing about the future is that it comes one day at a time. (Abraham Lincoln)0 -
A good stand-by from tinned veg: fry a chopped onion then add the 'juice' from a tin of peas and carrots (I use the 50p Princes ones form Iceland or Farmfoods). Heat through then add the peas and carrots and a pinch of sugar, simmer.
It's a bit more substantial and tasty than just the tin of veg.0 -
I like them with butter beans.
Once hot, I add a dab of butter and a splash of brown sauce. :cool:0 -
Cut into bite size pieces, then roast (or fry) until starting to brown. Meanwhile, chop some onion, fry until soft, add a tin of tomatoes and herbs of choice (thyme or basil are good), and some chilli sauce if you like it. Add part-roasted potatoes and mix. Tip into a roasting tin or oven-proof dish and put back into oven until the spuds are completely cooked. Tasty as is, or make dips in the mix with the back of a table or serving spoon, and crack an egg into each one. Either put back in the oven or under the grill until the eggs are cooked to your liking.0

I always have a tin in the cupboard, they are crazyily cheap & used in emergencies (ie when I've forgotten to buy food or the kids have unexpected friends round) I shop them & bake with a little oil or cook in my halo fryer (very yummy)0
