What do you use your slow cooker for in summer

I love my slow cooker it gets loads of use in the winter but I'm not very adventurous and stick to cooking stews. Therefore it gets put away for the summer but I'd really like to use it. Does anyone have any summer recipes to share?

    Whole chicken- I just stick a garlic clove, half a lemon and some thyme in the cavity, put some butter under the skin & let it cook on slow for 4 hours. Perfect with salad, baguette, new potatoes etc. I have, in the past, put the new potatoes in with the chicken & they came out ok.

    Might be worth looking at the Old Style Board for inspiration :)

    Thanks I have never cooked a whole chicken in it, I will give it ago. Do I need to put any water/liquid in the bottom? and if so how much? Thanks

    I never have put any water in there, I do put butter under the skin to help it though.

    How about using it as a tagine? Lots of coucous, lamb, sultanas, aubergine etc. x

    Hmmm. This intrigues me. I love chicken, but I've never tried cooking a whole one. Does it not burn if you cook it in a slow cooker without liquid? Is the texture different than if you roast it?

    Chicken won't burn even without liquid. Tinfoil boils or onions to rest it on, makes it easier to lift out :)

    My oH has been using ours to cook pork shoulder to make pulled pork rolls - lovely.
