Some interesting suggestions; I never do any of that with mine ... it all gets spread with peanut butter and eaten for breakfast
If you wrap it tightly in foil it'll last for age, even at a stalk a day.

Waldorf Salad..........finely sliced celery, apple and walnuts bound with mayo (or mayo and natural yogurt mixed) and a splash of lemon juice.

You could just double or triple the amount of celery you use in your soup recipes. I regularly use two or three sticks in a pressure cooker full of soup without adverse effects (it could well be too much if you're cooking smaller quantities though).
I also like stir fried celery, on it's own or perhaps with onions. For some reason it doesn't seem to mix brilliantly with other things.0 -
I would chop and freeze as i always use, carrot, celery and onion as a base to many dishes x0

Yup I'm another chop and freeze person My DD gave me a head of celery the other week as they were doing a bogoff in Mr Ts and she is the only one who likes it in her house and I already had just bought some myself so I chopped and froze it bagged up ready to go into my stews and casseroles when the weather turns cold I also make soup with it I sprinkle some curry powder in with it when I make it to give it a nice peppery flavour as I do like spicy stuff.0

I once had a lovely celery and stilton soup in cafe! I'd highly recommend it if you can find a recipe.0
