It depends how much chicken you have left over and how much you want to eek it out.
If I have a lot of it then just chicken in gravy, but if not so much you can add sweetcorn or mushrooms or mixed veg. All make a very tasty pie filling.

Definitely agree on chicken & sweet corn - OH makes little chicken & sweetcorn 'patties' using the jam tart tray, with pastry lids - not sure about the health benefits of the extra pastrybut it does make it go a long way, and DS then takes them to school in his packed lunch on Tuesday as well as us having them with baked beans for Monday evening meal.
OH also does a chicken stir fry with the leftover chicken - rice or noodles, plus carrot sticks, onion, anything else left in the veg drawer that fits - which means we get 3 days meals out of 1 chicken! We've made it to 4 days in the past by using the carcass to make chicken soup, but its a bit of a faff so doesn't happen very often.LBM Dec 2013, Total Debt £31,992.06 Debt Free Date June 20220 -
Tomorrow is first day - week 4 of my September GC.
We had HM Quiche + HM wedges + LO Baked Beans + Carrots/Onions for dinner.

Anyone ever made mince and mushy pea pie?? My other half had one in a bakery months ago, and has been pestering me ever since to make one. Have some mushy peas left from dinner today so gonna attempt one tomorrow for him. Just not sure which pastry I should use?? I'm making roast chicken for tea. Anyone got a good recipe for a pie using LO chicken?
I sometimes make chicken and leek pie with left-overs (you can add other left-over veg too but not potato). Just soften chopped leeks, add to chopped chicken, season and add a white sauce. I would like to be able to stay out of the shops this week and base my meals only on what I bought yesterday so it might be a ready meal out the freezer for lunch and leftover chilli for tea rather than buying a salad for lunch plus stir fry bits for my tea. I've also got a bit attached to buying those fruit pots for my breakfast. Pound a pop :eek: but I'm terrible for buying fruit with the best of intentions at making lovely fruit salads and instead it sitting in my fridge until it goes off/gets binned.
I'm sad its Monday already. normal weekends go too fastwhy can't we have a bank holiday every week?
I'm also trying to decide what to do with my holiday, holiday plans/requirements have changed so leave I have booked for later this month isn't needed anymore but it would be nice to have some me time but would mean I won't be able to have my week in december like I did last year to prep for xmas and generally chill out..... so its chill out later this month or hold off until december and do it then. I do have a week to take in october too with the OH - just not sure I can face having my holiday in october and knowing then that that's it till xmas....0 -

I didn't record August spends properly so I lost track of budget, I'm pretty sure I went over
I'm gonna say £240 for this month, I have separate budgets for toiletries, household stuff, chocolate stash and school dinners so I'm hoping my budget will be achievable!
I have so much food in the house already I should be able to get away without buying much this week, but I'm not really organised enough.
