  • You can freeze them. cut them into small slices and blanch for a couple of minutes before freezing. Some people dont blanch them and just cut and freeze them. the quality will suffer but they are ideal for recipes, curries, casseroles, soups...

    slice and use instead of pasta sheets, when making lasagne (frying them first makes it less soggy)

    I have a great recipe for soup; really nice - and it can be frozen. Sleepy now, so will return tomorrow and post it on here.

    Other suggestion - do you have friends/neighbours who grown their own? Or other allotment-holders you can ask? You could suggest a swap - a bag of your courgettes for a punnet of their strawberries or a box of spuds? Or how about putting a tray outside your front door with an "honesty box" for people to buy some?

    Actually, thinking about it, I've also got a Nigella Lawson recipe for courgette cake, so I'll stick that one on my post re. the soup as well. x

    Oh please if it's not too much trouble could you post the recipe for Courgette and feta fritters. They sound great!

    Give them away.

    I love them to look at, love how easily they grow but juessss, no ferkin taste.

    Put some in a stew the other day, they dissapeared into the gravy without trace.

    So, my view, highly decorative is flower and fruit, very simple to grow, probably highly nutritional in terms of food value but consider them veggy stock:D:D

    courgette and cashew nut soup. Saute onion, garlic and courgettes for 5 mins. Add veg stock and simmer for 30 mins. Then add a packet of cashew nuts and simmer for another 10 mins. Then blend.

    So so yummy and can be frozen.

    My dad had the same problem a few years ago, every time I went round there I came home with a bag full! he couldn't give them away quick enough. He hasn't grown them since lol

    The best use I found for them was cake :)

    Ingredients
    200g butter
    200g caster sugar (I used granulated)
    2 eggs
    2 small courgettes (peeled)
    1 apple (peeled)
    200g plain flour
    pinch of salt
    1/2 tsp baking powder
    pinch cinnamon ( I used a lot more)
    60g pecans ( I didn’t use these)
    80g sultanas
    *************
    Method
    Preheat oven 180/gas 4.
    Grease and line tin.
    Cream butter and sugar.
    Add beaten eggs.
    Grate courgette and apple. Squeeze water out. Add to mix.
    Add flour, salt, BP,cinnamon. Fold into mix.
    Add nuts and fruit.
    Bake about an hour.

    Courgette and Brie Soup (from the New Covent Garden Soup Co. Book):

    Serves 6.

    450g (1lb) courgettes, sliced
    2 medium potatoes, about 350g (12oz), peeled and chopped
    1 onion, finely chopped
    1.2 litres (2 pints) vegetable stock (personally, I use stock cubes, though the book recommends making your own stock)
    225g (8oz) Somerset Brie, remove end rind and cut into pieces
    salt and freshly-ground black pepper

    Put all the ingredients except the Brie in a large saucepan. Cover, bring to the boil and simmer gently for about 15 minutes until the vegetables are tender. Stir in the cheese until melted. Cool a little and then puree in a liquidiser. Taste for seasoning.

    I've made this a few times. The first time I put too much salt in, but it's a really nice soup to make. I usually make double-quantity and freeze in portion-sizes (using those handy plastic take-away tubs from back in the days when I could afford take-aways!)

    The recipe from iammumtoone is essentially the same as the cake recipe I was going to post. In the Nigella book she recommends sandwiching the cake together with lime-curd. Yum!

    Courgettes are the only vegetables I've been able to grow with any success (my fingers aren't very green) but I think I ended up giving loads away.

    Did you know that you can also deep-fry the yellow 'leaves' as a snack?
