My Favourite Courgette recipe:
Courgette pasta
Ingredients
4 courgettes, thinly sliced
1 onion, chopped
2 garlic cloves, chopped
a knob of butter
1 tbsp oil
100ml cream (or crème fraîche if you are looking for low cal)
dried mixed herbs
300-400g pasta (any type you like- I like the tricolor)
parmesan to serve
Method
1. Bring a large pan of salted water to the boil.
2. Melt the butter in another solid pan, add the oil and gently fry the onion for 5 minutes Add the garlic and cook for another 5 mins, until the onion is soft.
3. While the garlic is cooking, add the pasta to the boiling water and cook according to the instructions on the packet (normally about 10-12mins)
4. Add the courgettes to the onion and garlic and cook for about 5 mins
5. Add the cream,season with S&P, and gently simmer, then turn off and stir the herbs through
6. Drain the pasta, stir through the sauce and serve with grated Parmesan.0
