    Good Evening III :hello:

On a roll, have hit a purple patch of connectivity, so I'm going for it.

In all the palaver of RL, I haven't forgotten my 'Worker's Wednesday' Challenge. So tonight, we rushed, caught the bus, just in time and whisked ourselves off to Vietnam. I made a vegetarian version of the famous 'Banh Mi' sandwich, using halloumi cheese in place of the meat or tofu (can't get on with tofu :()

    Pic here;

    001_zps9f735fc5.jpg

The bread was from mrL's instore bakery - sandwich baguette's at 19p, we had one each. I made some chipotle mayonnaise. The sliced cucumber was left over from a mrM YS haul (last week?) and there were 3 half cukes in the bag for 19p (they were small) so 6p worth of cucumber? The halloumi was mrAld*s at £1.69 (?) a pack, the pickled veg are; carrots, cauliflower leaf ribs and red onion. Usually you use radish, but we're not fans, it'd be a waste to buy a bunch, so I thought I would use the ribs of the cauliflower leaves that were left over in the fridge. Good idea, as they have a slight hint of pepperiness. The coriander is from mrL - 55p for a 250g bag (plenty left over) and some mint from the garden.

I've never made them before, now I have no idea why I have waited so long!!! I used THIS recipe as the basis of my version.

Whilst I have been away, I scored 1 NSD and found 1p *roadkill* :j

Now, the BB cut out once whilst I was typing this, so I'm posting, with fingers crossed and bidding you goodnight. Thanks everso for popping in and posting. Know that you are appreciated. Greatly :D

Loving the look of of your veggie Banh Mi! - such a coincidence as I've just signed out a Vietnamese cookbook from my local library! Everything in it looks lush but complicated - yours seems so simple by comparison!

  • Burger and chips looks terrifically :rotfl: unhealthy!! Spectacular that it's a bean burger and HM curry sauce. Nom nom. Gr8

I made HM pizzas for tea. Then ran out of yeast so made soda bread.

Sainsbugs had some fabulous raspberries, they were humongous. £2 a pun net. They've disappeared nicely with some cream (and meringues for me!). I used up £7.50 nectar points plus I had a fiver in my purse so no spends today.

Leftover pizza for lunch. Dinner sorted by Dd for tomorrow too.

    Take care all.

  • Oh my goodness Greying! Brilliant thing one, you are back. Brilliant thing two, three different food pictures. Those blackbean burgers look fantastic.... I'm going to try them soon.

I had a lovely day at school and bonded with my lower set GCSE class for the first time. Hurrah!!!

I don't know how I keep a straight face Sweetie but they are all so well meaning and generally sincere.... the school is in a very challenging area and can be quite tough but all the pupils just want to know we will always be there for them no matter what they do or say. So we love them no matter what and eventually it works! I am loving it!!

Hope you all had a really good day and so glad you are back GP!!
With family, friends and pets (or any combination of them) life will be fine!

Wish I had the time to read this thread from the beginning :(
Love the idea of putting piccies of successful of meals:)

Made own "paneer" this week - brilliant for milk near its sell by date when you know you can't possibly eat enough cereal the following morning to use up 4 pints!!

Pressed it, chopped into chunks, lightly fried then then made into a spicy indian veggie dish with peppers and onions -really yummy should have made chapattis but feeling lazy so just put into mission deli wraps because they were on offer this week ;)

Didn't think of taking pic but it looked very colourful (always like a bit of colour on my platters!

Kids loved it too, even DS, who is a teenage carnivore craving protein of the meaty kind 24 hours a day.....

    Hi GP

I had missed seeing the pictures of your dinner everyday so thanks for posting the catch up.

I am going to try the bean burgers on DH who likes a bit of spice. I haven't come across black beans before though. Do you buy them dried? Are there any others that would be a good substitute?

I used Leanne Brown's aubergine pasta recipe last night but added 70g of smoked bacon and about a third of a chorizo lying in the fridge. It was lovely and spicy.

We are having the lovely vegetarian and gluten free standby tonight - cheese omelette!

Have a great day and I look forward to tonight's pic

GP, I've taken back the grocery challenge recipe list from October, as Bluegreen has heavy commitments at the moment. I've just added links to both the Leanne Brown books.

I didn't realise that all the recipes aren't listed at the front of the pdf's :doh:just found the index at the end of each :o
