Hiya, been quite absent from the boards with things going on at home so trying to hon back in again
I googled about freezing eggs at the weekend as it goes and froze a load ready for wi ter as we're buried under the things at the mo..! Apparently they can last for up to a year in the freezer. I'm planning to try defrosting and cooking one up this weekend before I commit any more to their fate
Mmmmm..... lemon curd. I'd forgotten that used eggs, but it doesn't keep long I don't think? (Ie not worth making up a mega batch unless we give lots away or bake it into cakes...?)April 2021 Grocery Challenge 34.29 / 2500 -
Hi Shortie
Welcome back.
I would love to hear how the egg defrosting goes. Did you freeze them in the shells?
Yes Im sure I've read that lemon curd doesn't keep long in the cupboard/fridge but below is a link to a recipe which says it freezes well and that you can actually spoon it from the freezer (I'm guessing like icecream or sorbet). There are also a few suggestions for using the lemon curd in other recipes on the same website.

Might be an idea. I'll see how freezing a batch goes and also cost it (my eggs are 10p each). As well as cakes etc it's also a good toast topper/sandwich maker. and might be nice for gifts too - I'm just trying to imagine a nice green or blue gingham topped lid? Hmmm there's a thought if only I was very organised.

Hi there everyone! I read my Dad the lovely comments from Greying and others about his adventurous taste in food. He was thrilled and says if anyone ever goes to Bluewater shopping centre there's a wonderful and reasonably priced Lebanese restaurant there! He's also going to tell me the name of the cookbook so I'll post later. :j
Love my Aged D, he's very sweet and quite intrepid! :cool:DD and I are putting everything back in the kitchen tonight and baking in the new oven starts tomorrow. Scones are deff on the list but there's a lot of valoo flour and other bits and bobs to use so we're doing batches to freeze. DD is a really good cake baker and recommends M Berry cappuccino cake if you get her book out the library. It's the one with her holding out a plate with a sponge on it if that makes sense.
Trying to have an NSD day today as have just bought a pile of books for my new teaching job in sept. Need to get back on track urgently!
Sorry this is so long and have lovely days!!!:rotfl:With family, friends and pets (or any combination of them) life will be fine!

Oooh thanks supersaver100 - I'll have a quick look at that link. Add good to know if can br frozen okay too!
We simply cracked the eggs into indivdual, Mr T value food bags, then popped them carefully into an icecream tub. The thinking there was that we can use them whole as fried eggs or whisk them for cakes - neither way takes up more space.. I have read that you have to be very careful about defrosting them slowly in the fridge though (I guess to keep tummy bugs at bay?) so one is slowly defrosting in our fridge today and if all looks and smells okay tomorrow morning I'll try frying it up - will let you know how that goes.
Well... that's if I survive tonight, lol - am suppsed to be at my folks' house for dinner but not sure if I dare :rotfl:. My Dad had an accident in the back garden a few weeks back and doesn't have use of his left arm (and won't do for a long while yet - if the movement ever fully comes back). So they've had workmen in to do some decorating that he was planning to do - thankfully as one evening when I was there last week, the decorator was walking out to load up his truck last week to see their front garden ablaze (the firemen still have no idea what started it and we would have been oblivious to it if the chap hadn't walked out to load up his truck!), Then, because my Dad's arm is out of action, Mr Shortie has been round theirs decking an area for them that my Dad was going to do and on his final day there he's gone and broken a finger by smacking it with a hammer!:eek:
Not sure if I dare go round to my parent's house ever again, lol :rotfl:April 2021 Grocery Challenge 34.29 / 2500 -

Lol! Fear not the egg will be reported on tomorrow. Besides, I've left work late and my trains are showing as delayed. Maybe a sneaky McDs will be the order of the day? :-PApril 2021 Grocery Challenge 34.29 / 2500

Good morning :hello:
Hey supersaver - you've got some cooking to get through eh? I didn't know that you could freeze lemon curd, and I actually have never made it. But ever such a handy tip, thanks!
shortie - how lovely to see you backNigella is a big one for freezing eggs/yolks/whites. So I'm hopeful that it not only works, but the eggs are then useable going forward.
YIKES  to what is going on at your parentals house  However, by my counting that is *3* things that have happened - should be ok to venture over there now
Hopefuljoy - lovely to read your posts - never apologise for *joining in* - that's what we're all hear for
So last night went in a blur - in more ways than one
I made a dinner with a nod to American Independence day. I cooked veggie sausages (mrt Lincolnshire ones) and they were put in a HM roll with some caramelised onions. The bread rolls used mrL bread flour, but I subbed in about 60g of cornmeal - this worked well, there was a slight yellow tinge and the texture of the rolls was good. I'll do that again
I made potato salad that was mostly based on the recipe in the 'meat free monday' cookbook - for which I cannot find the recipe on the webbut it is a warm salad, oil and vinegar based rather than mayo, with gerkins, spring onions (but I used red onions), radishes (but I omitted - we don't really like them), whole grain mustard etc.
Finally, I made a sweetcorn salad. I'd not made the recipe before and it took quite a bit of prep, as you bring it all together at the last minute, so that the dressing doesn't wilt the leaves to a green sludge. I followed THIS recipe and it's a keeper. We enjoyed it very much. [Although I did tailor it to make 2 large portions, rather than serve 8, and put way less sugar in than in the recipe]
In addition, we had a beer from those good folks over at Steven's Point brewery in Wisconsin. It's good, but gosh, is it strong...... cue gentle snoring before the first half of the Brazil footy match had concluded......... :rotfl: [I'm blaming lack of sleep from the night before.......:rotfl:]
Photo here;
I can also claim a NSD for yesterday
Dinner this evening is a choice of several dishes. It is going to depend on what we end up doing and how much time I have.
Today's activities have been somewhat scuppered by the weather. But there is actually a plan B. Just need to get and do itPerhaps it would be better if I made a coffee first....... Or I could watch the *Tour de Yorkshire*.................
Decisions, decisions...... :rotfl:
Right, I best shift a tail-feather and do something.........
Ta everso for popping in, reading, commenting and joining in. It is greatly appreciated, by me. Always.
See y'all later.
