    When I have a big glut of leeks to use up I make a leek and goats cheese tart (if only I could find goats cheese that cheap!). I think it's my own recipe but may be a hybrid of Delia and Jamie:D

    Slowly braise the leeks in butter over a low heat, when softened and dijon/mild mustard, dried thyme and a splash of cream. Meanwhile blind bake the shortcrust pastry, I use those yorkshire pudding tins with four indents so that I can then freeze the individual tarts, it doesn't hold together well enough for slicing iyswim. Fill the tart cases with leek mixture and add a slice of goats cheese to the top of each one cook for 10-15 minutes further. Soft goats cheese gets sort of burnished on baking but the type with a rind gets all melty and gorgeous.

    Its a day of coincidences today as I have spent the morning practicing with my son as he has to make Goats Cheese tart for his Home Economics AS level. The tart was delicious and made totally from scratch. Recipe as follows.....
    Pastry:
    8oz of Plain Flour
    pinch of salt
    2oz butter
    2oz lard/ vegetable substitute (Trex)
    Ice cold water

    Filling:
    40g Butter
    85g Courgettes
    85g Runner beans
    85g peas/sweetcorn
    onion finely chopped
    300 ml milk
    25g plain flour
    2 large eggs
    full fat soft goats cheese sliced
    3 small vine tomatoes

    Method:
    Pastry ala Delia
    Line and bake ala Delia
    Preheat oven to 170 degrees celsius
    Melt butter in frying pan and soften vegetables and onions
    Mix flour into a paste and en-corporate into milk.
    Add to vegetables and stir continuously until flour cooked out
    Cool for 5 minutes stirring constantly.
    Add beaten eggs beating vigorously into the sauce and season.
    Pour into the pastry case.
    Dot with goats cheese and tomatoes
    Bake for 30 mins until filling set and golden. Turn down oven if cheese is burning.
    Leave to cool a little before eating.

    Thanks everyone for all your ideas.

    The cheese was from a Tesco Express and tbh I don't why they stock it - they firstly reduce it to £1.29 ish and then if I am lucky down to pence; I expect their stock control will tell them shortly not to get it!
