What to do with goats cheese

Tesco have a range of "speciality" goats cheeses on their cheese counter and also pre-packed. There is also a spreadable goats cheese you can get (green label, hexagon tub). Great for kids spread cheese sarnies. There is also the block cheese you can buy for grating, slicing etc etc.
Worst thing about goats cheese is the cost! Kids seem to like it now they have got used to it. Goats cheese can have slightly stronger and more pronounced taste to cows cheese and i think this is what put my kids off when they first have to switch off cow products.0 -
My favourites are:
Caramalised red onion tart with cherry tomatoes and goats cheese - just add chunks and put it under the grill
And goats cheese wrapped in filo pastry - so quick, easy and tasty! I have it with a nice saladComping, Clicking & Saving for Change0 -
We have a log of goats cheese and have no idea what to do with it.
1. Can I cut it and freeze it?
2, Does anyone have any receipies involving goats cheese?

You can just eat it you know
It doesn't have to be made into something else.
I love it melted on pieces of crusty bread with a green salad. It also goes very well in savoury tarts.
Easy veg and cheese tart
Ready made puff pastry rolled out and scored about 1 cm in from the edge. Place on a baking sheet.
Spread with roasted veg -peppers, squash, onions are delicious.
Add any cheese but goat's cheese will be lush. Drizzle with olive oil and bake for about 25mins in a hot oven (190-200 degrees c).0 -
Yummy melted on toasted french bread, good for using up if it's gone a bit stale, and served with something fruity like red onion marmalade or chutney0

It is also very nice to top a HM pizza with. Last week we had baked chicory with goat's cheese: cut chicory in half lengthwise, place in oven dish cut side up (2 halves per person). Top with thick slices of goat's cheese, drizzle over a bit of olive oil and sprinkle with mixed herbs. Bake in oven for 20 to 25 minutes until chicory is soft and goat's cheese melted."Remember that many of the things you have now you could once only dream of" - Epicurus0

I make veggie lasagnes with goats cheese sprinkled on top
As this has fallen from the front page of OS, I'll add it to the existing thread to give you more ideas.

Lol my recommendation would be to bin it as I despise the stuff (was forced to change from cow's dairy when I was little, never got on with it because I hate the taste so didn't have any milk or cheese or ice cream for years, I think that's why I'm short!).
But I know a lot of people like it in salads, warmed with some walnuts and vinaigrette on the salad leaves, or on top of stuffed peppers, or mixed in pasta. You can also bake it like you do with Camembert (I think).
Edit: I wish I did like it because I'm veggie and often it's on prix-fixe menus as a veggie starter or main, at my partner's Xmas do the starter was something with goat's cheese. I've got quite a sensitive nose and even the smell makes me want to gag. I went to a gallery opening with canapes, took one and I didn't realise it contained goat's cheese... I didn't have a napkin and had to force it down. I can still remember it now, it was awful lol**Thanks to everyone on here for hints, tips and advice!**:D

I have field mushrooms and Goats cheese. :j
I am thinking off ambe cooking the field mushrooms whole (on the hob) in maybe a little water and oli then filling with the cheese and putting under the grill.
Will this work do you wise people think?0 -
I'd bake the mushrooms in the oven with a few slithers of garlic pushed into slits in them (if you have any, ok without if not), then top with the goats cheese and return to the oven once they're nearly done. No need to add any oil that way either although you could if you really wanted!0
