I need to purchase a Vodafone PAYG SIM. I will only be using this SIM card to receive calls, which may not be too oftern.
I have found a few old sim cards in the house, however when I try to use I get a "unregistered sim" error message.
If I purchase a sim and keep the phone turned on, will the SIM card and credit remain indefinitely?

You need a balance deduction every 6 months to keep it active. The cheapest way is an incoming roaming call in another EEA country for a few seconds.
