When my husbands iphone was unlocked recently we had the email to say it was unlocked. It told us to restore but as soon as I connected it to itunes it recognised the new network sim without having to do anything.
When connecting to iTunes the system will normally start an auto synchronisation, as I said, it seems the unlock process doesn't work exactly as Apple planned (they wanted it to need a forced restore) and a sync will normally trigger the unlock signal from the server. This is a different procedure to how or why a phone would relock after a jailbreak unlock, that is why I commented that gjchester was going to confuse the thread with his comments.====0
