Flight Delay Timings

Hi All
Does anyone know exactly at what point the delay of a flight is measured? I landed in Gatwick yesterday, and the delay at the point of touchdown was 2H 55Mins, but was 3H 05 mins at the gate. Where exactly is the cutoff for measuring the delay?
Also, because BA had to send out a replacement plane because of earlier mechanical troubles, has anyone managed to get any compensation due to lack of facilities onboard? ie no food choice or very limited choice of drinks?

they use the actual arrival (touch down time) v's the scheduled arrival time. You can check on flightstats what was reported0

Well, the flight stats sight says delayed 180 minutes, which I guess means I can claim. Where do they get these figures from?

You were on a short-haul flight, there's usually little or no choice anyway.0 -
It was a Club Europe flight which normally has a fair choice of food & drink, still at least we had use of the lounge so managed to keep warm and fed in there.
