Your right but Apples software updates do close these hole off.

And create a bunch of new holes.
Example: reason to release iOS 6.1.3 was security code bypass vulnerability. Except blocking Evasi0n jailbreak of course :-)

So.. with 6.1.3 you cannot bypass security old way. In less than three days turned out, there is brand new method to bypass security code, without any problem. You can access user photos, contacts, calendar, etc.

And every next jailbreak is getting easier and easier to use. Previous jailbreak, Absinthe was installing itself without any user interaction on the phone. Evasi0n is installing with just one tap.
Comparing to other methods, with DFU mode, complicated actions in tight timeslots it's just a pleasure to do it. Why it's so easy? Because iOS system is just full of holes, like swiss cheese.

But back to my point, The old holes are closed and there may be more to fix, but look at many other phones, most other makers shove the phone out the door and then that's it no more upgrades at all.

That's because of small customer base. It's not economically justified to spend money on it.

It's also means, it's way less rewarding for hackers to exploit security holes. Finally it's equally safe or even safer.
