    Whoops ended up spending £18.23 on 'a few bits' for the coming week. I'll need to do the weekly shop still tomorrow ... not off to the best of starts! Still, there's the whole of the month to go.

    Going to break from the meal plan tonight and have sweet chilli chicken for tea with noodles. That reminds me - must get the chicken out!

    Meal Plan - 1st April til 7th April

    Monday - Tuna Pasta Bake, Creamed Leeks, Rocket
    Tuesday - Chicken Fajitas, Salad
    Wednesday - Jacket Potatoes, Tuna, Beans, Cheese, Salad
    Thursday - Stuffed Pasta with Bolognaise Sauce, Salad
    Friday - Pepperoni Pizza, Breaded Chicken Bites, Salad
    Saturday - Fajita Spiced Grilled Chicken Burgers, Corn on the Cob, Salad, Oven Chips
    Sunday - Some kind of roast, Potatoes, Peas, Swede and Carrot, Gravy, Broccoli.

    Will probably go shopping on Friday and will only need to buy:
    Rolls
    Wraps - for lunches
    Milk
    Joint of meat/whole chicken
    Broccoli
    Salad stuff?

    Should be a fairly cheap week if I'm careful! I could also not buy the meat for a roast and just have sausages instead.

    No spend day so far today. I've the day off work and have been spending it baking bread, making soup, cleaning the kitchen and ok, slightly lazing about. Going to the gym in a wee bit so feel justified lol.

    Thought I'd share this week's mealplan below :):
    • Sun 31 – Roast chicken and all the trimmings (had guests over - leftover cooked chicken frozen along with bones for stock, leftover veg made into bubble and squeak for lunch today!)
    • Mon 1st – HM gnocchi with roasted squash, walnuts and sage butter with salad
    • Tues 2nd – vegetable chilli enchiladas with salad (made with veg chilli from the freezer, will make the wraps today)
    • Wed 3rd – Spaghetti bolognaise (sauce from the freezer along with value spaghetti)
    • Thurs 4th – Lentil, mushroom and spinach lasagne with salad (lasagne from the freezer)
    • Fri 5th – Mushroom stroganoff with rice and cabbage (stroganoff from the freezer)
    • Sat 6th – HM hummous, HM pittas and salads

    Got a spag bol out of the freezer and I've made some pizza dough, gonna have a spag bol calzone type thingy for tea, looking forward to it too.

  • I'm getting into this parcimony now! Instead of throwing out a couple of ancient spuds, a soft tomato and a wizened leek found in the bottom of the fridge, I made a lovely rosti with a fresh fried egg atop.

    Had too much potato left over so have saved it; I will keep a bit of smoked haddock and king prawn back from a planned kedgeree, and make a luxury fishcake. And I'll do a bit extra kedgeree and roll it into balls and fry, like Italian risotto balls.

    So four meals out of a piece of haddock and a couple of eggs, basically! :D

    April is going well so far. I'm just going to savour the fact that I have an intact budget before the big Aldi shop later this week.
    The shopping list looked quite normal but its getting much longer now we've all decided to make homemade curry and chinese over the weekend. My OH doesn't eat those foods so, as he's away, we are making our own "takeaways". I'm trying to figure out how to make it cheaper atm.
    We've managed to completely disregard Easter traditions without realising this year. OH made an amazing HM paprika chicken and bacon pie on Saturday and now he's knocking up a tomato pasta creation with more bacon and chorizo.
    Jan-March: reduced monthly food bill by £400 (cancelled overdraft and started saving)
    April: £112.17/£180 food budget. £9.39/£20 household. 4/15 NSD's.

    NSD here - hopefully the first of many for april.
    Did too much mashed potato yesterday so have added some grated cheese and tomato to it and we are having cheese & potao pie tonight with salad and baked beans.
    Tomorrow will use up the remains of the turkey and gravy by turning it into turkey, onion and mushroom pie. Have small amount of puff pastry in freezer so will use this up instead of making some shortcrust. There is enough to take mum a small pie as well.
    Been having a lazy day today and spent most of it sewing squares together for a blanket. Dont mind the knitting or the crocheting but not that keen on the sewing bit.
