    Baking always makes me feel happy.

    Was gonna try the peanut butter and choc cookies from hummingbird book with my little girl next week. Think cookies are always good to make with the littleys lol

    I've probably made 90% of the recipes in that book, not sure how I missed this one :D

    Think it is a bit of a deadly book to have really lol. Have you made any of the pies cause I was gonna have a go but I thought they might be a bit tricky. The cobblers look nice too.

    Hi,

    Double Chocolate Chip Cookies

    – preptime: 35 minutes; cooking time: 40 minutes

    This is aversatile recipe for melt-in-your-mouth cookies. You can use either chocolate spread for adouble chocolate taste or peanut butter for a nutty flavour.

    Ingredientsfor 20 cookies

    125g/4ozunsalted butter
    90g/3oz softlight brown sugar
    1 egg
    50g milkcooking chocolate & 50 dark cooking chocolate (melted in a bowl over water)
    2-3 drops ofvanilla extract
    90g/3ozcaster sugar
    200g/7ozplain flour
    30g/1oz cocoapowder
    1 pinch ofsalt
    1/2 oz bakingpowder
    150gchocolate chips either - white/milk/dark

    1. Preheatthe oven to Gas 4. Cream the butter andboth types of sugar together in a large bowl until the mixture turnscreamy. Use an electric mixer.
    2. Stillusing the electric whisk beat the egg, melted chocolate, and vanilla extractinto the creamed butter and sugar mixture, until fully mixed in.
    3. Sievethe flour, baking powder, cocoa powder, and salt into a bowl. Use a wooden spoon to help the mixturethrough, if you need to.
    4. Addthe sieved flour mixture to the chocolate mixture and gently mix them togetherwith a wooden spoon or electric mixer. Stir in the chocolate chips.
    5. Place6-7 heaped dessert spoonfuls of the cookie dough onto each baking tray, leavingspace between each mound so they can spread as they cook.
    6. Bakefor 14 minutes - the cookies will still be soft to the touch. Take the trays out ofthe oven and leave the cookies to set for 2-3 minutes. When set, transfer them onto a cooling rack.

    Forbest results, bake the trays of cookies one at a time on the middle shelf ofthe oven.

    I make these regularly for my friends, and they don't last long in my house.

    If it is the "Cake Days" book I've made quite a few of the pies from it.
    Coconut Cream Pie
    Grasshopper Pie
    Peanut Butter and Chocolate

    and most of the cheescakes, cobblers and tea loaves. There is a good selection of cupcakes - the only thing I don't get along with is the whoopie pies.

    Actually just scanning through the book it must be a different Hummingbird one as there is no peanut butter cookie recipe. Could someone share please - I can't imagine a world without peanut butter:D

    Actually I thought you meant the first Hummingbird book, which is the one I've made 90% of. This newest one I had bought but hadn't got around to using yet. I've just made the lemon ricotta cookies and they are lush :D Hubby picked up the book too, turned to a page with oaty cookies that use condensed milk, and shoved it under my nose (think he might have been dropping a hint??) :rotfl:

    Give the pies a go, I've never had a Hummingbird recipe to turn out anything but perfect so I'm sure they'll be lovely.

    Yep it's in the first book, this one.

    If you don't have it it's usually only £4.99 on the Book People website and is definitely worth picking up.

    Oh that's so sweet, I'm pleased I could help if only in a little way. Do you like them? If you have some next time, roll them in the icing sugar and you get a lovely crinkled effect.
