    hi there
    tonight I roasted some chopped up peppers with garlic and some halved tomatoes in a little olive oil and balsamic. I had it with some grilled halloumi and some couscous from the cupboard. Taking leftovers to work for lunch tomorrow.

    Earlier this week I made a sweet potato, red lentil and coconut milk curry (sweet potatoes half price at lidl!) and it was utterly delish with some rice or chapati/naan and plain yoghurt and dollop of mango chutney.

    like you, I am always on lookout for nice meat free dishes and will keep eyes peeled!! Making home made pizzas at the weekend.

    A NSD today :j, even found 2p on my walk to the station so I've come home with (very slightly) more money than I left with.

    Long day at work today, so I didn't get the long walk in that I wanted. Was just finishing off my work with the aim of leaving at 4.30 & at 4.29 an e-mail came with a 50 page document that needed approving for some last minute construction work tonight. Grr. :mad: Eventually left just after 7, so home just before 8.

    Tea was some leftover bacon, onion & mushrooms with pasta. I'd bought some fiery cheese with chilli flakes in from the bullring market a week or two ago, but I find its too hot to eat on its own, so I chopped up a little bit and melted it into the pasta to give it a bit of a kick. Worked out rather well even if I do say so myself.
    Debt free since December 2015. It can be done

    Well you get your change, and pop it into a pot which sits on the mantelpiece or windowsill or inside a cupboard in the kitchen. Then because you no longer have that change, you then end up going to the cashpoint earlier or more often (or both) and withdraw an extra fiver, tenner or whatever. Or worse, you end up paying on a credit card.

    Now that money could have been sitting in the bank and earning a little bit of interest, or been used to make an overpayment on a debt to reduce the interest payable. But instead it just sits in a pot in the house until you eventually get round to emptying the pot a few months down the line.

    I've just never understood how it is seen as money saving

    Yes I can see that logic. We save pennies etc for my little boys bank account. But I try and actually pay them in as much as possible. What is annoying is that most banks wont take odd pennies, you have to save until you have a bag of the amount they want. i.e 100 pennies in a coppers bag for £1, or £5 worth of 5ps.
