Bit of a shock it seems that I have type 2 diabetes, my sugar levels that should normally be 6 are 18 :eek: which could account for the sight loss and feeling so tired all the time, but won't know what is going on with my eyes until April :eek: so I have been put on Metformin and I have an appointment for the diabetic clinic on the 15th and I will just go from there. The good news is that my cholesterol although still a little high has dropped by nearly 2 points

Come on LW share the Choccy Mousse recipe.
Wolfie's Choccie Mousse
Ingredients
4 oz cooking chocolate (dark)
5 fl oz THICK cream
1 tablespoon sugar
1 large sprig fresh rosemary
2 large eggs
Proceed thusly:
Chop the rosemary needles into tiny bits with scissors, put in a pestle and mortar with the sugar, and grind together - reduces the size of the sugar crystals, and releases the rosemary oil.
Melt chocolate (I do it in the microwave; you can use a basin over a saucepan of water if preferred)
Add the cream and the sugar/rosemary mix to the chocolate and mix well.
Separate the eggs; put the yolks in the chocolate mix and mix in well, put the whites in another bowl.
Whisk the whites up til they're nice and frothy and stand up well in the bowl.
Fold whites thoroughly into chocolate mix.
Divide the mix between 4 pretty dishes and refrigerate.
If you wish, you can decorate the top of the mousse with a tiny sprig of rosemary; or if you have a satsuma that wants using up, divide the segments between the dishes and arrange artistically on the top.
Or glace cherries would work.... use your imagination.
It also works perfectly well "skyclad" if you don't feel like doing decorations.;)
As I mentioned, this does 4 servings, and it keeps overnight in the fridge with no problem (being just two of us, we have it two days running);)
It's adapted from a recipe that was in the Telegr@ph donkeys ages ago; but I've tweaked it quite a bit to suit our taste, and I only make half of the original recipe; originally it was to serve 8, and rather too rich for our taste.:o
I actually use the unpasteurised cream I get from the Farmers Market, but any "Troll Cream" (ie extra thick - Pratchett fans will get the reference):D will do the job.If your dog thinks you're the best, don't seek a second opinion.;)0 -

Afternoon all!
Had an appointment with my financial advisor this morning, the bank were annoying me about having too much money in my account after putting a pension cheque of OHs in, so they made me the appointment, she then told me it was a bit soon to be thinking about investments as she could tell my head wasn't in a good place!!!:mad: Managed to politely tell her that when she had a qualification in head sorting or counselling she could advise me on that, but until then she could confine her advice to my finances, !!!!!! I think I know my heads up my bahookie thank you Mrs!
Anyways, currently have a chicken in the oven cos it needed cooking, but DD and DS out for dinner, I will have a breast tonight and tomorrow will make chicken and ham pie or somesuch tomorrow. DD still working her way through the cream cake, apparently its "yummy", I only had wee bit as I'm not fond of cream.RIP Iain

Done a load of washing and dried it on the line :T ok they're bed sheets and duvet covers so lightweight but it means its not hanging around the houseso washing basket is currently empty :j I shall enjoy the moment while it lasts :rotfl:

Here we are - copied from where I posted for someone who wanted to know how to use up nuts!! lol
This is heavily adapted from a Linda McCartney recipe (I seem to be incapable of keeping a recipe in its original format - I always tweak them to suit us).
It's never quite the same twice, as I use any combination of nuts, as long as there's 13 oz in total.;) Equipment-wise, you want a greased and lined 2lb loaf tin, a LARGE saucepan, and a large-ish bowl, plus a food processor for blitzing the nuts and bread.
As I didn't do an ingredients list separately, I'll colour the ingredients in red for you.;)
One onion, diced and fried in a little butter, in a LARGE saucepan
Remove from heat.
Add a couple of dessertspoons of plain flour and enough milk to mix into a fairly sticky paste - don't be put off, it doesn't look appetising at this stage.
Leave this to cool.
Meanwhile, blitz 13 oz of nuts in the food processor - any nuts will do, I use a mix of brazils, cashews, almonds, walnuts, or hazelnuts - whatever's in my cupboard at the time.
Put these in a bowl.
Add 7 oz wholemeal breadcrumbs - I just blitz a few slices of bread in the food processor.
Add a handful of mixed herbs.
Add 2 to 4 oz of grated cheese.
Keep this bowl of dry ingredients to one side.
Return to your saucepan.
Add two large eggs to your now cool mixture.
Now mix in the contents of your dry ingredients bowl, mixing it all thoroughly (now you see why a LARGE saucepan was needed!)
Grease and line a 2lb loaf tin.
Turn the nut loaf mixture into this, and press it down firmly; make sure the top is as even as you can make it.
Bake at 180 C for 40 minutes.
Leave it to cool in the tin, then turn it out onto a plate or board.
It freezes beautifully - I slice it up first, into 8 slices, and I separate the slices with a little greaseproof paper for ease of use, and it can be heated through in the microwave for use.
It goes well either with rice and sweet'n'sour sauce, or with roast root veggies and Marmite gravy.If your dog thinks you're the best, don't seek a second opinion.;)0 -

Had a total nightmare today, being bombarded from all directions about how to keys to the new house etc
So now instead of getting the keys tomorrow it could be next week:mad::eek: Told OH he said they can swing for it if they expecting rent went we can't even move in.
Fingers crossed it will happen sooner.
Phoned virgin its now been changed to the 18th feb for installation, switch off 17th feb.
got bread and been sorting through more junk and paperwork.
Finally got the gas safe invoice done and dusted.
Now just need to renew the registration and sort out a boiler guarantee. Oh the joys0 -

Butterfly brain sorry to hear about the results of your tests. I was tested not so long back and all was well however my cholestrol is borderline apparently. I guess i will have to stop eating chocolate at some point... just not yet.
Spaghetti Bolegnese for tea tonight. Hubby will have something different as he hates pasta in any shape or form and he hates tomato based sauces too.

I had an upsetting morning. Walking to school I had 8 year old in one hand and 4 year old in the other. Youngest was road side. The car we were walking past began to manoeuvre (right outside the school gates) and started reversing. The bumper was encroaching further and further onto the path, very nearly hitting my 4 year old. I screamed and ushered the girls into school. I could feel the panic rise inside me (I suffer from panic attacks) but managed to distract myself. I felt I should go report it at the school office but the panic caught up with me. Cue a sobbing mother. School felt awful and cross with me that the parents do this right outside of school.
The good thing is that my pensioner friend came down and took me out for lunch to cheer me up. It worked,, we had a right laugh!
Came home to find a letter from the agents acting on behalf of our new LL (who is lovely) stating that we are late with our rent and they have advised the LL to start legal proceedings to recover the debt. We paid it on 17th January. Luckily our new LL is always on site here as he's still building houses I went to see him and very nearly had another panic attack. He was furious mind. He's having a meeting with the agents tomorrow anyway as they're letting him down. Still he wiped his phone out there and then and left a message to talk to agents about our threatening letter.
So all is ok but I feel like I have been through the mill a bit today.
I'm supposed to be making a stew but it's too late now. I fear it may be cheese on toast for tea. Actually that sounds yummy.
I am trying to work out how the heck I can calm down inside. :cool:0
