Moved some savings over to my ISA last night. Interest only 0.5% but it still beats the 0.4% it was getting in the savings account.need to look for a new ISA with better rates this year.
Just going to make some lemon curd. :)

Managed to get Mr tc to do the shed roof yesterday-obviously I helped and project managed. :D We didn't even need to buy anything for it as we had some roof felt, bichumen (sp) (it wouldn't let me spell it with a t - it came out in exclamation marks) and tacks already left over from something else. :money: :D
Tea tonight is minced beef and onion with potatoes and veg.
Got to get some more stuff on ebay this week-Miss tc is helping me with that. :)

Hi Tilly, I made lime and lemon curd.
    I followed this recipe-but I changed it a little.
    How To Make Lemon Curd

Makes about 1 cup (mine made 2 jars) What You Need

    Ingredients
    3 or 4 lemons (I used 2 lemons and 4 limes)
    3/4 cup sugar
8 tablespoons unsalted butter (1 stick), cut into pieces (I measured this in dessert spoons)
    5 large egg yolks
    1/4 teaspoon salt (I didn't add salt)

    1. Peel and juice the lemons. Peel 3 of the lemons, taking as little of the bitter white pith as possible. Cut all the lemons in half, juice them, and measure out 1/2 cup of juice. Save any leftover juice for another use. (I didn't measure the juice, I just used it all).

I mixed all ingredients in a metal bowl with an electric whisk then put the bowl in a pan of water on the cooker. (it will look really curdled but this is fine at this stage-once it gets hot it looks lovely and smooth)

Heat it up stirring frequently with a wooden spoon. (do not boil) When it coats the back of the spoon and you run your finger through it, it should leave a distinct trail.
Pour into prepared jars and cover with wax paper etc
    store in fridge once cold.
I made 2 batches The 2nd batch I cooked slightly longer and it made the lemon curd thicker.
I gave a couple of jars to my sister and she was very impressed. :D
I made an angel cake with the remaining egg whites-it was lovely. :)
