pastryless quiche?

    I sometimes do crustless quiches as a lunchbox item; baking them individually in muffin tins (although I suppose technically they're frittatas if they don't have a quiche). Just mix together your choice of veggies/meat/cheese with beaten eggs and a splash of milk, grease a muffin tin with frylight spray, pour in and bake for 15-20 minutes or until set and golden. Yummy!

    It's gorgeous and turns out very easily from a plain flan dish as it shrinks a little when cooking. It's quite easily adaptable too.

    Is this possible? I need to cut out lots of carbs and fat so was thinking about making a quiche without the pastry. How does it turn out?
  • Really nice, I make it regularly. For some reason it takes much nicer cold than warm though.

    I have done this before, and it works out fine. It is pretty much a fat omelette.

    This is a frittata! You can put ANYTHING in these types of flan.....sweet peppers/tuna flakes/cottage cheese/chives etc.

    Yep, Slimming World members do this. It is like a massively fat frittata. My favourite is with lean bacon, softened onions, herbs and a tiny bit of gruyere.
