I sometimes do crustless quiches as a lunchbox item; baking them individually in muffin tins (although I suppose technically they're frittatas if they don't have a quiche). Just mix together your choice of veggies/meat/cheese with beaten eggs and a splash of milk, grease a muffin tin with frylight spray, pour in and bake for 15-20 minutes or until set and golden. It's gorgeous and turns out very easily from a plain flan dish as it shrinks a little when cooking. It's quite easily adaptable too.

This is a frittata! You can put ANYTHING in these types of flan.....sweet peppers/tuna flakes/cottage cheese/chives etc.
