I would imagine you could just do the egg mixture in a greased tin? It'd be like a baked omelette.

Exactly. Grease your chosen dish, scatter the 'bits' in the dish - ie bits of bacon/tomato/mushroom or whatever else you are putting in it. Scatter some grated cheese over the bits. Whisk your eggs in a bowl with a bit of milk, season to taste and pour over the bits & cheese. Bake until set. Scoff.
    Hope this helps :)

    180 degrees for 30 minutes?

I used to eat this when I did Atkins; there was a recipe to make 'pastry' from cream cheese and Splenda (yes really), which no-one could tell wasn't pastry.

Thanks Tam Lin, I can cook well enough but I just do it by instinct, what looks and feels right, it's done when it looks done, and I'm rubbish at giving temperatures and times!

Would it be this one from Aussie Lass?

    Impossible Quiche

    1 1/4 cups milk
    1/2 cup SR flour
    3 eggs
    1 cup grated cheese
    chopped bacon or ham
any grated veg you have - carrot, zucchini, chopped mushrooms, etc
    1 onion chopped
1/2 can of drained corn niblets.

Mix all together and bake in moderate oven 3/4 hour or until brown on top.

I put anything or as little in this depending on what I've got in the fridge. Makes it's own pastry.

Also, if you want your "quiche" to be really succulent and tasty, try adding a finely chopped, de-seeded green chilli pepper! It really does work wonders, and with a fair size quiche, it's not really spicy.

I read somewhere about a quiche crust being made with cooked rice and a beaten egg.

What i need though, are recipes for eggless quiches - any ideas ?

Could you use silken tofu instead? Never used it myself.
