    On Tuesday (25th), in mine, I had Chicken Thighs/Drumsticks (browned first) with onions, tinned tomatoes, HM chicken stock, pre-soaked mixed beans, chicken stock cubes, mixed peppers and dried mixed herbs. Went down a treat and froze the remaining sauce/peppers/beans for serving another day with a jacket potato - freebie meal from left-overs :j!

    Thursday night - cooked a Gammon Shank overnight while soaking some soup/broth mix.

    Friday - Kept half of the stock and about a third of the meat back for Pea and Ham Soup. Turned the Gammon meat into 'Shank Stew' with potatoes, chopped leeks, chopped onions, carrots, swede, a couple of savoy cabbage leaves shredded for colour, soup/broth mix, half of the stock, mixed herbs, celery salt, veggie stock cubes and then added dumplings about 3/4hr before serving - that served 4 HUGE portions and some for the freezer - another freebie meal from left-overs :j!

    Today (Saturday) - the remaining stock is back in the SC with a box of dried peas and half a bag of yellow split peas (all soaked overnight) and finely chopped onion with the remaining shank meat for 'Pea and Ham Soup'. We may have to have this tonight for evening meal as there's no more room in the darn freezers :rolleyes:.

    foxy-tigger apologies for lateness in replying to your request for lamb neck curry, I went into labour early, my son arrived 4 weeks early!

    Having had a "pregnant" brain, I am trying my best to remember...

    1x lamb neck fillet chopped up
    1x pataks madras curry tin (lurking in cupboard - do NOT add water as directed on tin spinach and mushrooms will provide fluid)
    3-4 medium potatoes chopped into 1cm cubes (or thereabouts!)
    Frozen spinach
    1x tin chopped toms
    Mushrooms, chopped sliced as required
    You may need flour to thicken towards the end
    Coconut milk if madras is too hot esp for kids

    cooked for about 6 hours on high (by mistake) lamb fell apart but would cook on slow next time

    Caribbean Chicken

    3 tbsp veg oil
    2 large onions, chopped
    4 sticks celery, chopped
    3 carrots, sliced
    500g mushrooms, sliced
    2 red peppers, sliced
    8 chicken joints, skinned
    400g can sliced peaches
    400g can pineapple chunks
    10 tbsp cornflour
    3 tsp paprika
    3 tbsp soy sauce
    3 tbsp worcestershire sauce
    8 tbsp malt/wine vinegar
    1 litre boiling water
    salt & pepper

    Fry onions, celery, carrot, mushroom and pepper in a pan.

    Add chicken joints and fry until browned all over.

    Drain peaches and pineapple, reserving juice, and add to pan.

    To make sauce blend cornflour and paprika with soy sauce, worcestershire sauce, vinegar and reserved juice, add seasoning, boiling water and pour into pan.

    Bring sauce to boil, stirring continuously.

    Transfer all ingredients to slow-cooker, cover and cook 5-7 hours.


    Forgot to add that these are the quantities to fill the large 6.5litre cooker so use half quantities obviously if you've got a smaller cooker or want to cook less :)

    I've seen the 'Caribbean Chicken' recipe mentioned many times but not been able to find it - lousy at searching :( - so thanks for posting that :T!

  • Hi , we tried the pilaf and had the same results !! , i think next time we'll use the recipe but cook the rice separately

    i've got a large chicken in mine. i'm hoping to have roast with it today, chicken curry tomoz and chicken pie tuesday.Also hoping to make lots of stock also.

    i'll make the chicken curry and the pie mix also in the Slow cooker.
  • Liver and Bacon casserole. Hoping its as good as it smells...

    First attempt at Minestrone Soup in mine - smells and looks like the real thing so far!
    Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.
