We had the same conversation about the pork fillet that we were given this morning- we googled some recipes and have decided to do one that uses banana.

simply cut into inch thick medallions, and rub a litle sunflower or veg oil over them and season. heat a griddle or thick frying pan to a fairly high heat and put the medallions on - turn over after about 2 mins and cook for 3 -4 mins on the other side. (check they are cooked right through) and serve with whatever sides they want.
or when you turn them over top the medallions with apple sauce - then just before serving sprinkle on grated cheese and flash under a hot grill till the cheese bubbles - you can try this while its on the griddle, but, Ive yet to get the cheese to melt before the medallion starts to burn.0 -
I have a piece of pork fillet 400g in the freezer and would like to ask you all for some inspiration. I can only think of Paprika Pork/Goulash sort of thing but there's got to be something else I can do. I would like to stretch it to 3 meals for 2 adults, so will probably add tons of veg and some beans or pulses to pad it out. I have a good storecupboard including herbs and spices and will be cooking it sometime next week after shopping on Monday. So suggestions please!0

Are you absolutely certain that a tender joint such as pork fillet is going to be done the justice it deserves going into a stew/casserole/goulash? I really, really don't think so. Those recipes need something cheaper which will be improved by longer cooking. The fillet should be roasted preferably a la Delia or Jamie or similar and the slow-cooking left for another much cheaper cut.0

Pork & apple casserole.
I put apples, onions, celery, pearl barley, beef oxo, tsp paprika, bayleaf, & garlic in the slow cooker with the pork.
Serve with mash or rice.Try to be a rainbow in someone's cloud.0 -
I'd fry medallions and serve with a cider, mustard and creme fraiche sauce, mash and veg, yum!0

We had sesame pork noodles yesterday but I used a whole fillet for 4 of us
.
Toast sesame seeds and put to one side.
Stir fry grated root ginger and crushe clove garlic in hot oil.
Stir in and fry pork sliced thinly until golden brown.
Add tiny brocolli florets for few mins
Add jar oyster sauce.
Meanwhile cook egg noodles as instructions.
Drain noodles and add to pan.
Mix together with half sesame seeds and cook.
Serve sprinkled with remaining seeds sprinkled on top.Mortgage, we're getting there with the end in sight £6587 07/23, otherwise free of the debt thanks to MSE help!0
