    blimey it all sounds sooooo lovely, maybe i should have bought more fillets lol!!!

    Slice quite thinly, toss in seasoned flour (I put chopped rosemary in), fry in a bit of sunflower oil on both sides until brown, remove from pan, add onions to the pan, fry for about five mins, return pork to pan add about half a pint of veg stock and some sliced mushrooms, cover and cook for about 15-20 mins, serve with mashed potato to soak up all the lovely juices and other veg. Enjoy.

    I always dip the fillet in flour egg and then roll in a coating of dry sage & onion stuffing mix instead of breadcrumbs.Then put in the oven and roast it as you would a small joint ,turn it over after half an hour and it is quite delicious and a very cheap and tasty mid-week roast. It is quite filling and a little goes a long way.I always did this for my husband and it was his favourite meal.
    Apple crumble and custard if you have any room afterwards and you have a really good and filling meal as a change from a small roast chicken mid-week

    thanks jackieo. again, sounds wonderful!!! i never bought a pork fillet before and now i have all these terrific recipies to try out, i think that i know what will be going in my trolley next week!!

    hi all

    Amazingly, I have got to my age and an avid cook, but Ive never cooked pork fillet :confused: :rotfl: god knows how Ive managed it. But I chose it as it looks so lean and lovely, I dont want to be disappoited ;)

    I was thinking of doing it with couscous, green beans carrots, mushrooms with a pepper sauce

    Would it be nice? I presume so but having weird doubting feeling :confused:

  • just today on Good food Live they did a pork fillet dish with peppers and stuff! You can look up the recipe on www.uktvfood.co.uk It looks like you are on the right lines to make it with what you are planning!

    Hi lynzpower,

    I love to stuff pork fillet..Split it down the middle and fill it with stuffing.

    To make the stuffing lightly fry onions and mushrooms. Add herbs (I use parsley and thyme). When the onions and mushrooms are cooked, combine them with a small tub of single cream with an egg and a little mustard beaten into it. Add breadcrumbs until the mixture is the right constistency. Put the stuffing into the pork fillet and wrap the whole thing with streaky bacon and tie with string. Then pop it into a hottish oven (around 190 degrees for 45 minutes to one hour. Allow it to rest while you use the juices to make a gravy.
