Hi Lyndsay
If you check the MEGA INDEX meat section, there are a few ideas for previous discussions on pork which might be of some use to you.

Char sui pork - this is delicious with egg noodles.
Slice the pork or use your 'scraps' for this!.
1lb pork
2" fresh root ginger, peeled
1 large garlic clove, crushed
2tbsp hoisin sauce
2tbsp dark soy sauce
2tsp light soft brown sugar
1 tsp 5 spice powder
2 tbsp sunflower oil
4-6 drops red food colouring (optional - but adds to effect!)
2 tbsp clear honey
Trim any fat from pork if necessary, finely grate the ginger and squeeze out the juice into a non metallic dish, stir in rest of the marinade ingredients, add pork and turnver in the dish until well coated and set aside aside for at least 2 hours.
thats it!!,:D
you can fry them with a very little oil add fresh noodles to the wok and you have a great dinner with no added salt or msg!
Great also for bbq's (if you have chops not bits ofpork!), i've also made kebabs with them and grilled them 9make sure you soak your bambo skewers berfore grilling.0 -
Spicy pork kebabs
Dice your pork in little cubes.
Mix a pressed clove of garlic (or 2), mix with a teaspoon of paprika, a teaspoon of cumin seeds, a teaspoon of ground coriander seeds and a spoonful of olive oil.
Marinate the pork in this for 30 minutes.(at least)
Grill for 15/20 minutes and serve with Sweet chili sauce.

Pork fillet is my favourite kind of pork - other cuts (like chops) I find too fatty & end up cutting most of it off before I'll eat it.
It can be quite dry so don't over cook it & it it's nice with a sauce to moisten it a bit. My favourite is to stuff it with feta cheese & dried apricots then wrap in parma ham or make a cream sauce with mushrooms & wholegrain mustard.0 -
lucie, that sounds divine.....can you pm me the recipe......pretty please!!!!!November NSD's - 70

Hi
If you have either one or two eating apples, or some dried apricots, you could do the following. (Or you could use apple juice instead).
Slice the fillet into small 'medallions', about 2cm thick (across the fillet, not down its length). Peel and slice an onion (red is nice if you have one). Peel and slice apples, or finely shred dried apricots, if using them.
Gently fry onions (pref olive oil) until they go translucent. Add in apple slices/apricots and cook for 2-3 mins. Push to one side of pan, heat up and add the pork slices. Move them around and cook them for 5 mins (they don't take much). Mix apple/onion mix with meat.
Keep on the heat and do the following:
Either: add some apple juice to get a sweetish gravy going (bring to bubbling to reduce it a bit) AND/OR make up some gravy granules (I use vegetarian) and pour this on AND/OR add a tub of creme fraiche or natural yogurt, and then heat through for another 5 mins. Both the gravy granules and the creme fraiche help create a thicker sauce. If you like a lot of sauce just keep adding more liquid, but do check for taste. Even though this is a sweetish sauce, it still benefits from S and P.
Always best to turn heat off and let it sit for five minutes to let the meat relax. This will go lovely with carrots and other veg you have.
Enjoy!Taking control, slowly.:rotfl: :rotfl:0
