anyone know where i can get pikelets from cant find them anymore in marks & spencers & have never seen them anywhere else, for anyone who doesnt know what they are they are like a crumpet but very thin .

I think they sell them at the co-op, we use to have them all the time when I was a child but the crumpet seems to be king nowadays0

Aren't pikelets and crumpets the same thing? What I used to call Pikelets in Coventry are called crumpets in Wales0

Whereabouts do you live? I grew up in Derbyshire and you could get pikelets pretty much anywhere, but when I moved 'dahn sarf' it was almost impossible to find them. I once came across them in Sainsbury's in Kingston-upon-Thames and nearly dropped cork-legged

Pikelets in Manchester, crumpets in Birmingham. Used the 3 pronged toasting fork in front of the coal fire many years ago but now buy crumpets that just about fit in the toaster. Can't say I like the thin crumpets (cheaper option) as they don't hold enough butter to make them juicy

Pikelets in Oz are what we call scotch pancakes.I was off to conquer the world but I got distracted by something sparkly

Pikelets, crumpets and scotch pancakes are all different beasts. Pikelets are made from the same yeast mixture as crumpets, but they're cooked without a ring and so are flat, but have that bubbly, holey top. Scotch pancakes are generally made with self raising flour (and a bit of sugar) so they're smooth and flat.

Pikelets are like thick fluffy pancakes here is the recipe
1 cup (150g) self-raising flour
1 tbs caster sugar
3/4 cup (185ml) milk
1 tbs white vinegar
1 egg
A little bit of melted butter
METHOD
mix flour and sugar together into a bowl with a pinch of salt.
Add vinegar to the milk and let thicken
Whisk milk and egg together, then add butter and add to dry ingredients, whisking until smooth.
Heat a non-stick frypan over medium heat. Drop level tablespoonfuls of the mixture into the pan and cook for half a minute or until bubbles appear on the surface.
Turn over and cook other side for 1 minute until golden.
Allow to cool and serve with butter.0
