If Pikelets are no more then I am sad to hear it. In my view they are much nicer than a crumpet. Nor does a genuine Pikelet bear any resemblance to a Scotch pancake! Pikelets toasted on a fork over the fire were a lovely part of my childhood! I haven't seen them for a while but much prefer pikelets to crumpets as I love the texture but don't like the thickness of crumpets.
I also love scotch pancakes but they are completely different.14 Projects in 2014 - in memory of Soulie - 2/140 -
Pikelets are like thick fluffy pancakes here is the recipe
1 cup (150g) self-raising flour
1 tbs caster sugar
3/4 cup (185ml) milk
1 tbs white vinegar
1 egg
A little bit of melted butter
METHOD
mix flour and sugar together into a bowl with a pinch of salt.
Add vinegar to the milk and let thicken
Whisk milk and egg together, then add butter and add to dry ingredients, whisking until smooth.
Heat a non-stick frypan over medium heat. Drop level tablespoonfuls of the mixture into the pan and cook for half a minute or until bubbles appear on the surface.
Turn over and cook other side for 1 minute until golden.
Allow to cool and serve with butter.
That's remarkably like my drop scone (aka scotch pancake) recipe!:rotfl:0 -

If you live near a Bettys ( Harrogate , Ilkley , York , Harlow Carr , Northallerton ) and have a fair bit of money to spare they sell them , I think they are about 50p each ( they are yummy though ).0

Pikelets are part of my childhood and my lovely nan never taught me how to make those. so thanks for the recipe chelle'! I will make some tomorrow! my mouth is watering now but its a bit late to be cooking!
Nan did use a proper 'bakestone' - but I do have the heaviest frying pan in the world!0
