I sometimes use cottage cheese in place of cheese sauce in lasagne1% at a time no. 40. £8000 (For dream family holiday) 94/100

Having a bad week here as eldest dd(not living at home)had a car accident yesterday-hit by a "hit n run" box van! I can see bank of mum in action again shortly. I just hope they repair the car not write it off. It's one thing after another. Youngest dd distressed as it has brought back bad memories of a previous car accident when I nearly lost both of my girls. That on top of recent loss of their Dad and we are not having a great time! Only good news is that DS has been offered a local job by a company who phoned him about a CV he handed in last year!
However-I will be redundant after Saturday. Sorting out DH pension now otherwise it will be zilch soon. Thank goodness for rainy day money as at the moment I have thunder lightning and a possible tsunami of a life! However-I am a positive person and I am glad I am a good money manager as I am well prepared for all of this. Not spent any money today or yesterday as cupboards and freezer still full. I have spent not a penny since Sunday Tosco shop, asked my neighbour to get my T.V. mag for me ,so apart from Computer class tomorrow night have no reason to go out ,or near a shopDo I need it or just want it.0

Sorry that things are so rough at the moment (((hugs))). You sound so positive despite all that is going on, and like you say, being careful with your finances helps enormously. Hope DD is okay after the accident, and great news about DS's job :T. Sending positive thoughts and energy your way :A
I'm off to the high street in a moment with DNephew. He arrived last night just in time for tea (B!sto kid). We need to run a few errands and as it's raining, we will be gardening tomorrow fingers-crossed. May take him to Co$ta for a hot choc and a cake - my treat (from another budget!).

A massive spend of £0.55 today on a lt milk. Only brought the one cause it was 6p more than when I go to A!di on Thursday:rotfl:
10 days left and still have £136.28 left in the pot - happy how this month is going so far.
Have a tub of plain cottage cheese in fridge and dont know what to do with it, brought it to do a 4 cheese souffle with but then decided against it - any ideas welcome please - dont like it in jkt pot really, would it work in a quiche if I mixed it with 2-3 beaten eggs and some sauteed leeks with perhaps some ham or bacon bits then poured it into a quiche case ? Its two days out of date but dont think this would hurt would it, will do a sniff test first.
Cottage cheese works fine in a quiche, I whisk it up wit hthe eggs and milk,
pour into case and ,if I have any , sprinkle grated cheddar on top.Slimming World at target0 -
