Thank you lois:) I think will be be a very good idea to spend tomorrow doing a wee stock check of foods and create a lovely meal plan up until Friday - I also have a jar of cocktail cherries left over from Christmas so I'm sure between these, the potatoes, and the laughing cow cheese (3 triangles!) I will be rustling up gourmet, wholesome meals in no time:D

The thing is, I told him NO, however I know I'll cave - and a machine with flashing lights has just driven past my house so roads will be ever so slightly clearer. I'll have him think it's a no until the very last minute though, then I will agree whilst making certain he feels both incredibly guilty and grateful in equal measures. I love the power of being a parent:D

The snow has finally hit my wee sheltered spot of Scotland with a vengeance:D
Scotland has shelter??? Not that i recall. It must have had double glazing and cavity wall insulation put in since I moved away ;)

Finally - the snow boots will be able to get the use that they have so been looking forward to.

I saw a recipe when I was googling around the forum a few weeks ago - sliced potatoes, onion, tinned toms, cheese - layered and baked in the oven. Apparently it's lovely but I haven't tried it yet.

That's sounds pretty much perfect luls - I think I'll have a try today. Can you remember if the potatoes required to be parboiled first?

I don't think so.... You need to cover your dish and bake for a good hour to an hour and a half and then take the foil off to let it brown.... Let me know how it works out!

Was just thinking, I would perhaps make up some veg stock and add some of that too to make sure that it doesn't dry out....

You could add mushrooms to it too...just a thought :)

Perhaps the juices from the tinned tomatoes would help? I used to do a version of this in my student days, except - layer of turnip, layer of mashed pots, layer of cheese and so on....loads of black pepper and it was fab:T
