You should always refrigerate tomato sauce (it instructs you to on the label) tomato sauce kept in cupboards is a big spreader of food poisoning.0

You also have to mind, that with telling you to keep it in the fridge the producer of the product covers his own back in case of any comeback because the product got mouldy before its by date..Credit card: £ 2780

I've had so many sauces go mouldy that I put most of mine in the fridge these days. Things like Oyster sauce go really mouldy and stink when left in the cupboard for too longKwai Chi

The top shelf of our fridge is literally full of various mustards, sauces etc etc etc
Some say to put in the fridge after opening, some don't - why I've got them ALL in there I don't know, I suppose because my mother did, lol. What condiments/sauces do you keep in the fridge and which stay in the cupboard?

edited to add I was had a huge catering size jar of tomato ketchup expode in the cupboard under the sink (only place it fitted) during a hot summer - would rather loose a shelf in the fridge than clean up THAT mess again!I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0 -
I have so far done this by trial and error - keep every (new) condiment in the cupboard first. If I find it goes mouldy or smelly, then next time I buy it it (or make it), it will have to live in the fridge. It tells you to keep it in the fridge just in case it goes mouldy....
Tomato sauce contains both sugar and vinegar both of which will inhibit bacterial growth as there is not enough water for the bacteria to grow, however it can go mouldy. I've never heard of tomato sauce causing food poisoning, but if you can point me in the direction of any information on this, I'd be grateful.0 -

Only thing i keep in the cupboard is brown sauce and red sauce......
Beetroots/pickles/mustard/mayo/chinese sauces/branston/jalapeno peppers/red peppers/ even sudocream is in fridge oh and the aloe vera for sunburn :T:T:T0 -
I keep things that I don't use often in the frezzer we have ice cube bags and I can then pop out how much I need and defrost it this works really well with mint sauce and am trying sea food sauce at the moment0

I'm so glad I'm not alone! The entire top shelf of my fridge holds various condiments/sauces. (it's a half shelf with a trap door IYKWIM). Tall bottles and marmalade are on the next shelf down.:wave:0

I heard an interview with a bloke who ran a factory in the US which made Worcestershire Sauce. He was asked why the bottle said, 'Keep Refrigerated' on it. He said that if it's stuck at the back of the cupboard people don't use it. If they don't use it they don't buy more.
Using similar reasoning, it would be more MSE to keep it in the cupboard as that way you'd use less!
Keep mayo in the fridge though, especially if it's the real stuff made with fresh eggs.0
