  • I have been poorly for the last couple of days, because I got bitten by something that has infected my lymph nodes, so tonight we are having one of the casseroles that are in the freezer with roasties and brussels tonight.
    Casserole, already costed ( potatoes 24p and brussels 25p

    We normally have a roast of some sort on Sunday's but today I can't be bothered so we are having a ys chicken cooked in the slow cooker with mash and vegetables.

    Dinner will be for 4 people and there will be left over chicken for tomorrow or Tuesday.

    Chicken, £1.75
    Carrots, £0.15
    Potatoes, £0.11 ( bought when 7.5kg for £2)
    Broccoli, £0.13
    Cauliflower, £0.15
    Cabbage 1/4 of, £0.13

    Total cost for dinner, £2.42 / 4 people, £0.61p each If I include eating the whole chicken today, in theory there will be enough left over for soup or left over pie which will feed 3 of us tomorrow.

    That looks very low on veg to me, esp the cabbage as 1/4 of a cabbage split 4 ways is very little. If the broccoli and cauli are frozen then def better value and would provide more per meal.

    I have added the Tesc0 49p veg deals to my christmas food delivery as they are good offers and I can use them all.

    I have also donated some bits to our local foodbank because, whilst I am going to find the next few years very tight as I pay my debts, I know there are others much worse off than myself. I cannot bear to think of anyone actually going hungry :(

    I didn't mean any offence but 13p worth of broccoli is a very amount to split between 4 people in my opinion.

    To me, that is like 1/4 of a head of broccoli split between 4 people and the same for a small cauliflower.

    My two young children and I can easily eat a whole head of broccoli and half a cauli along with carrots and cabbage in a meal.

    Anyway, we aren't here to argue and we all have different views on portion size/costings etc. It doesn't sound like a lot to me but I am sure others will be fine with it.
  • Frubal I buy Aldi frozen broccoli 89p per kilo so 500g costs out at 44½p and 250g costs out at 22½p
    Much cheaper way to buy broccoli and it is frozen straightaway it hasn't lost valuable nutrients in shipping

  • Good idea B/B I too often get frozen veg if the fresh looks a bit clapped out.No wasteage either when your only cooking for one as I doI make sure I have two to three veg with my dinner if I can as living alone its far too easy to end up just chucking something quick in the m'wave I usually prep my veg first thing in the morning and in the steamer it doesn't take very long.I get home from DDs at night depending on what time she gets in from work tonight it was almost 7 before she got home and I am in charge of her 4 boys
    I also have either a soup starter or a small pudding afterwards ,nevr both so two courses are quite filling I find.I also cook veggie at least two or three time a week if I can as it does help keep costs down

  • I like to eat veggie a couple of times a week, but DH is a carnivore and I have to be [STRIKE]sneaky[/STRIKE] selective of what I cook.
    He is very fond of soup and pudding night and not only is it frugal it is veggie ;)

    Egg and chips is a cheap option.

    Egg Curry

    Cheese and onion pie

    Pasta bake with cheese sauce with mixed peppers and mushrooms

    Egg foo yung (basically Chinese Omelette)

    Savoury pancakes

    Quiche

    Fritatta

    Cheese Omelettes with savoury rice

    Poached, boiled, fried, coddled, baked or scrambled eggs

    Vegetable bread and butter pudding

    week-end offer 500g beef joint ale gravy, say's it's for 2, but me & OH have it over 2 days.

    Not a lot realy, but hope it's a help, seeing as the spuds and onions 'should' last over 2 weeks even if they are making up the bulk of the meals. B

    Thanks for the info Boultd. I work full time so usually pop to MrTs or the cooop after work. I really must get organised use Lidels again. I'm starting a new job in the new year near an Alldees :)

    BB - Hope you are feeling better.
    Another vote for plenty of veg on the plate. I am a lucky spud though as I have an active retired DH and we have a large veggi. plot. Very moneysaving !
