Feed a family of four for £20 a week challenge

    HOISIN EGG NOODLES
    Egg Noodles (as much as you want) 58p Aldi
    hoi-sin and garlic sauce 55p Tesco
    1 green pepper cut into chunks (super six 3 for 69p = 23p
    1/2 onion saut!ed 10p
    2 chicken leg quarters that have been cooked and diced or shredded 99p

    Total for 4 people £2.45 = 61p per portion

    In a small pan add the hoi sin sauce, pepper and chicken, making sure that the chicken is well covered in the sauce. Cook your onions in butter to the colour of your liking, then add them to the sauce with the peppers and mix it until they are covered.
    Cook and drain the noodles (this only takes a few minutes) and put on a plate or in a bowl then pour the sauce on top !

    I had a go on the train home but was torn over whether to include value sauces or things like a big bag of onions and spice to allow more cooking from scratch. And then I got thinking about leaving £3 for spending on the super six, market veg or veg from a supermarket as people will have different shopping facilities and an offer on veg is so useful.

    The ideas so far look great but I've done rough nutrition calculations on some of the suggested days and whilst a few combinations are 1600-1800 calories a day, most of them tend to be more like 1200-1400. That's okay for a week but if you have people with physical jobs or active teens it will be a problem. I fear some parents would be skipping meals much like jackieglasgow had to.

    I'll update this post with something happier, like a plan and shopping list, when I finally make up my mind :D

    Week 4
    Carry over from week 3. Salt, herbs, stock cubes, onions, 400g of rice, 1/2pk of sultanas, 8 sausages, 520g mixed veg, 400g pasta, plain flour, spread, 1 box of stuffing.

    2x 2litre creamfields milk £2.00
    Dried mixed fruit 64p
    1kg Tate and lyle fair trade sugar 88p
    300g of grove valley deli cheese £1.44
    Wholemeal bread 47p
    12pk rolls 35p

    Gammon joint 900g £3.40

    It will take a while to build up a decent stock cupboard at this rate, not impossible but very slow.
    At least in theory I now will have sr and p flour, salt, herbs, teabags and sugar. Also stock cubes.
    I think if I work out another week then it will have to be mainly meat free to help biuld the stock cupboard quicker. At least we haven't starved and I like most of these meals. :D

    Use the mince meat to make up mini mince pies or scones for snacks.

    Breakfast
    Porridge with mixed fruit for 5 days
    Toast with pate for two days

    Lunch
    Day 1, Egg mayonaisse rolls, follow with pineapple.

    Day 2, Beans on toast. Follow with some sultana scones made with Sr flour, sugar and spread. Stir in a handful of sultanas. The rest of the batch can be snacks.

    Day 3, Mix the last tin of kidney beans with mayo, the remaining 100g of rice and the last 200g of pasta. Make some cheese scones for after as above but with a handful of cheese.

    Day 4, Mushy pea soup, use 2x tins and 1pt of stock, salt and herbs to taste. Add diced onion as well. Serve with toast or make croutons from the bread.

    Day 5, Jacket potato with beans and a sprinkle of cheese. Follow with pineapple.

    Day 6, Make an omlette from the last two eggs, and cheese. Add onion. Serve it with the last of the beans. Follow with a tin of peaches.

    Day 7, Gammon roll. Follow with a scone and the peaches.

    Dinners
    Day 1, Gammon roasted, slice each served with egg and home made chips. Slice an extra slice each for a roll on the last day.

    Day 2, Pasta with cheese sauce and little bits of gammon cut through it.

    Day 3, Make a flan with home made pastry, pinch of salt. Little bits of gammon, 5 eggs and a dash of milk. Use 75g of cheese. Serve with a baked potato with beans.

    Day 4, Mix the passata with an onion, 4x sausages cut up and a tin of kidney beans. Serve with rice.

    Day 5, Vegetable burgers. Use 4x rolls to serve it in. Use up 280g of mixed veg with a 1/4 of the box of stuffing. Mush it all together and shape in to patties. Dry fry, top with a little cheese and serve with peas.

    Day 6, Use the last 4 sausages cut up, stirfry with the stirfry pack and serve with the noodles.

    Day 7, Gammon throw in. This is really nice and we eat it a lot. :o
    Throw the remaining bits of gammon in to a pot with stock, potatoes cubed. The remaining veg and an onion. Serve with bread to dip in the juices.

    egg on toast
    rice with peas and sweetcorn and sweet and sour sauce
    these are breakfast but could be fillings enough for lunch

    (they should brown ok without sugar just not be quite as sweet)

    dinner
    sheperds pie, using half the mince with loads of the mixed veg and sweetcorn. serve with mashed carrots

    crustless quiche, with half the ham, all the cheese, peas and sweetcorn, serve with chips/wedges and carrot sticks

    spag bol, using one carton of passata, onions peas sweetcorn and mixed veg and mixed herbs

    sausage beans, egg and chips, using 10 sausages

    sausage casarole using carton of passata, kidney beans, and 5 sausages, and mixed herbs

    tode in the hole, using batter mix an egg, the 5 remaining sausages, serve with mash, mashed carrots, peas and sweetcorn.

    chicken casarole, slowcooker the chicken then pull the meat off the bone, casarole, with carrots, peas and sweetcorn, serve with roast taties, and mixed veg.

    throw bones back in slowcooker, cover with water and leave for several hours, them strain, add peas, sweetcorn, carrots, and potatoes for chicken soup for lunchs

    thats harder than it seems, and it would be abit bland in the 2nd week i'd def try buying atleast one spice.

    will carry over atleast some rice, spagetti,marmalade,porridge, gravy, peas, sweetcorn, herbs

    sorry should have said breakfasts are mostly gonna be porridge, with any spare bread at the weekend being for toast, because most families need lunch box ideas, hence the sandwichs

    if it was me i'd be doing 2 days of sandwich (my value loaves have 22 slices someone told me recently theres doesn't)leaving 6 slices, 2 days of rice, chicken soup atleast one day as this will keep warm in lunch boxes, then baked taties on a weekend and beans/egg (or both;) ) on the other day.

    it's a pity i was 1p short of adding value baps which i was gonna add to go with the soup and to carry over for burgers in the next week.Cound add a packet of pitta bread for 20p.

    I am starting to wonder why I struggle to get my food bill below £300 a month.
    Within two months a family could have a half manageable store cupboard.:T

    see i do acually feed my family for around £30 a week (sometimes less liek last nights shop was £15 but last weeks was £40 however it was a huge shop) but we have alot more fruit and milk than that and more meat, problem is i use alot of whoospies as you know so it doesn't count and i do have an impressive storecupboard :) i'm gonna finish a 2nd week after lunch.
