  • What to do with carrots - there are healthy carrot cake recipes out there (ie no sugar for instance).

    Carrots (grated) in salads is another idea.

    Carrots to bulk out mince/quorn/etc in bolognaise type recipes.

    As part of a stir fry...

    Hello!!

    I've just noticed a few familiar faces! I very much need this thread for my store cupboard challenge, I will go back and get some ideas. I'm popping to aldi next week!

  • miststm...... We love roasted carrots and raw carrot. I use carrots in coleslaw, stir fries, stews, casseroles , cabbage rolls and cakes .
    As we are having salad tomorrow I am taking advantage of this week's S6 and will shred some savoy cabbage, finely slice carrots and sliced red onion, then I will mix it up with 10 second mayo ala mortgage free in three ....here is the link, it is so easy to make and you will never buy the jar stuff again!

    No, no cooking is needed.

    The only reason I cook the swede is that I cook them whole in the microwave for 30 minutes then just scoop the inside out. That way it comes out "mashed" but keeps all it's nutrients and is so much easier than trying to chop it.

    I love carrot and orange salad. Also carrot puree to serve a nice piece of white fish on top. The sweetness works really well.

    I'm going to give this a go, and see if I can come up with a meal plan that I think my family of 4 would eat. Will move with the times and try £25pw. Will have a look a bit later and see what I can do x

    ETA Gosh already finding it hard! 2 weeks is a lot easier to do than 1, but I know that doesn't help everyone.
