  • Hard boil them 10 mins then pickle them in white vinegar they will be fine for Christmas.

  • Best before is just that, best before. I've eaten eggs out of date by six months with no ill effects. Really, a few days isn't going to make much difference. I'd probably advise eating them before...Christmas.
  • I think stale eggs float - because they get air trapped in them - so fresh ones should sink. If it stops halfway.. then it's your call ;)

    Eggs have an air sac at the big end. As they age, this air sac gets bigger, making it float more easily. So sinking eggs are good. ;)
    If you lend someone a tenner and never see them again, it was probably worth it.

    And what everyone forgets of course is that when eggs were laid by 'loose' chickens, before the days of date stamping, who knew when they had been laid.

    The best before date means literally that and should have a built-in allowance so that it won't kill you if you use it by that date or immediately after.

    I use the above egg test and I always crack the egg into a cup just in case because I have had a rotten egg within date before.

    One other thought, stale eggs may not work as well in baking perhaps... probably ok for scrambled/fried eggs etc ie as 'eggs'

    If they stand on one end they are fine to eat but if they float, completely off the bottom then bin them!!!!

    A science teacher once told me that if you touch each end of the egg with your tongue, the round end will feel hot and the pointy end will feel cold - but if it's off both ends will feel hot. They really do - it's remarkable!

    I have been told sometime that older eggs are best for making meringue with -true?

    Would not have thought putting your tongue to an egg was a good idea - feathers are still clinging to some free range ones I buy so they aren't cleaned that well!

    I've heard that super-fresh eggs aren't the best for some recipes, too. I just can't remember which recipe that was!
