£7.00 per week - menu ideas

    I think I may have improved on the last meal plan for under £7 :j

    Shopping List (Mr T except potatoes)

    1 courgette 34p
    1 onion 19p
    3 carrots 23p
    1 value whole chicken £2.07
    Value eggs £1.25
    Value stuffing mix 15p
    Value chicken stock cubes 10p
    Value lemon curd 22p
    Sieved passata 29p
    Value rice 40p
    value white rolls 35p
    value frozen peas 95p
    potatoes, ald! 39p

    TOTAL £6.93!!!

    Breakfasts and Lunches would still be either a fried egg or lemon curd in a bread roll (still 2 short for the week for two people)

    Dinners would mostly be chicken based so would need dividing up into portions to last the week.

    Roast Chicken, 1/2 mix made into stuffing balls, one potato made into wedges or as roasties, peas and a carrot.

    Egg fried rice with chicken and peas

    Chicken risotto using 1/4 onion, 1/2 courgette and peas

    Chicken casserole made with 1/2 passata, stock 1/4 onion and 1/2 carrot - served with rice

    Veg casserole with stock, carrot, 1/4 onion, 1/2 courgette, 1/2 passata and peas - served on jacket potato each

    Chicken soup with hm stock, 1/4 onion, 1/2 carrot and rice - with stuffing dumplings

    Frittata made with remaining eggs and remaining potato and any leftover peas.

    Portions would not be large but it would be a fairly healthy diet for such a lean budget. A second pack of rolls at 35p would be good served alongside dinners as a filler.

    3 mushrooms 20p
    4 baking potatoes from ald! 39p

    Grand total = £7.02 (ok it is over the £7 but you could probably find 2p in the street if you went looking :D )

    Breakfasts/Lunches = either a fried egg or lemon curd in a roll - one day would be one sausage in a roll (You would be 2 rolls short so I would suggest a lie in on the weekend and get up for lunch :D)

    Dinners -
    Risotto made with 2 sausages and peas with tiny bit cheese on top

    Jacket potato with cheese and coleslaw

    Casserole made with 2 sausages, 1/2 tin toms and split peas - serve with wedges

    Omelette with peas

    Spaghetti with mushrooms, butter and black pepper (even better if you could get your hands on a clove or two of garlic)

    Pea soup followed by tomato risotto

    Spaghetti made with 2 sausages and lots of peas tossed in butter.

    If you had any seasonings/stock cubes etc then this would be all the better for it.

    I know this is not a healthy week's food but should be bearable for a short while as I think it offers a bit of variety.

    If you had butter already then that 98p would be better spent on some fruit or vegetables but I couldn't eat dry pasta - pasta with butter, salt and pepper is actually very good so I would personally rather have the butter than the fruit/veg.

    For an extra £2 you could include a reasonable amout of fruit/veg. Even one extra carrot would be an improvement on the above :rotfl:

    If you take out your frozen peas and substitute 2 tins of garden peas instead (21p each)(for the omelette and rissoto) that would save you another 53p for some extras like fruit.:T:T:T then you've really nailed it!

    I think my revised version that I posted just before your post is better as it is is better meat than sausages and more veggies.

    TBH I am surprised at what can be achieved - imagine what you could do with double the budget!! :rotfl::rotfl:

    also are you using all your eggs? as you could do scambled egg one morning.

    I would cook the chicken in the SC so I could get every single bit off the bone! Then portion it up for the 7 days allowing more for certain meals - ie chicken dinner would need more than a risotto.

    Re eggs - I have allowed an egg per person most days for breakfast or lunch, 4 eggs for Frittata, plus one left over for the egg fried rice. You could do scrambled egg on a toasted roll instead :)

    Okay - I will post a £14 for two people meal plan and shopping list tomorrow :D

    (again, it would be short term rather than long term as I doubt you can get all the nutrients you need in such a tight budget)

    Lol, how swish would you feel with £15 after a few weeks of £7, it shows how inventive people can be though, I love these threads, they always give me helpful tips :T:T

    Same here, we are a family of 4 and the thought of a meal plan for just £28 a week is exciting. :) I am sad I realise that. :o
