Celeriac Soup From River Cottage Everyday - Hugh Fearnley Whittingstall
And I thank you because I've forgotten just how much good stuff there is in this book
50g unsalted butter
1 large celeriac
350g leeks
100g potato
1 onion
2 garlic cloves
1 litre veg stock (or chicken)
100ml double cream
salt and pepper
melt butter
add celeriac, leeks, potatoes, onion and garlic, season. Sweat for 10 mins until veg softens.
Add stock. Bring to boil. simmer 25 mins
Puree soup.
Reheat gently.
Check seasoning
Stir in the cream.0 -
PIC why has your collie been refused her certificate, if she passed, she passed surely. How have you cheated, because you took both dogs through their test, do the rules state only one dog per owner and if you have two tough luck you cannot train it, if so totally daft.
I am afraid I would have a word with old dearie and ask her how you cheated exactly, making sure you do it with others around.
I use celerac in place of celery in cooking if no celery as only use both in cooking, celery being one of the few vegetables I loathe raw.
All this talk has made be make some soup - dried lentils, yellow peas, barley, carrots, onions and a stock cubes ( not a fan of potatoes in soup except beetroot), this will be followed by a small roast ( bought one ys and cut it in half and was small to start with) which has been in sc all day with salt, pepper, onions, tinned tomatoes to which I will add some bisto gravy powder to thicken soon and serve it with potatoes.
We have got into habit of a one course meal which is daft really so just have to remember to put out smaller portions.
Our favourite veggies are mashed carrots and turnips or parsnips.

Sounds lovely GQ - I've just scoffed an early tea of pasta with added oat bran (bought enough to sink a battleship when aldi had it in at 69p for 500g - never seen it since), tossed with turkey mince fried with fahita seasoning and onions, and a portion of runner beans from Mum. I could eat it all again!
I am also trying to stay in the £15 a week budget range as I've had to get a new fridge freezer this week. My lovely Mum has helped me yet again, but I'm still close to my overdraft limit and must concentrate on getting that down now.I believe in the freedom of spinach and the right to arm bears.

Your post of what you are having sounds good to me GQ...I've some salmon from last year that is probably still ok in the freezer(25 mins in an oven or 5 mins in a microwave)how easy to do some potatoes and veg with it. If I had the room Tesco's were doing 8 or is it 10 salmon fillets(frozen granted)normally £10 reduced to £5
We had an Iceland here and it upped and went(wish it would come back, we've plenty of empty units in the town centre)
Instead we got a Heron's but it is quite small, now when Superdrug upped and went they could have knocked the two units together instead they moved into that and now their original unit is empty. Or more central and now nearer to the busier part of town they could have taken over that larger unit that Woolworths occupied. Giving our town a better choice of frozen goods.
Not good for Heron's but if Iceland returned or we could get a Farmfoods here that would be great athough sadly the choice would increase my income would not. So perhaps a reason for them not to come back. Or others to leave...

PIC - is she in charge? If not I would speak to whoever is and explain what happened and why (at least as much as you want/need to say.
And ask for the rules to be made clear in public to everyone so the old trout knows she was in the wrong.
I think the only veg I am not bothered about is turnips, never seen the point of them.

PIC sod the silly woman. Some people really need some education on priorities in life. When DH was at his worst something like that would have knocked him over too - thankfully he's much better now but I feel for you both. It's really hard being the depressed/super-stressed one but it's also really hard living with them.0 -

Considering how I love food it is funny how you do end up having one meal and eating less. It is a different matter I suppose if you are eating less because of income being low which many are sadly.
As you suggest PAH smaller portions are probably are good idea as sometimes we do over eat I suppose, hence the suggestion many put forward of using smaller plates.:p

I hear that and it's probably true of most of the nasty things in life. I may feel a bit lonely and moan, just having me to think about but you don't have the terrible things that cause us the most worries in life\( which also brings us joy too)our loved ones and friends.
